Refrigerator Cookies III

Very good recipe! I divided the dough into 3 parts and shaped into logs, then used 3 different coatings, 1 was colored sugar, 1 was finely chopped pecans and 1 was cinnamon sugar. All were very tasty but out of the 3 I really liked the ones with pecans the best. I also melted some chocolate to drizzle over after they had cooled, using chocolate chips with a little peanutbutter for the pecans and cinnamon ones, and white chocolate chips with a little butter for the colored sugar ones. Made for a very nice presentation and these seemed to be a hit by all! Thank you for this recipe I will be making them again and actually thinking of making some up to send my my niece for Valentines Day, that will be fun to decorate and they are a cookie that holds up well with time.

Savory Vegetable Beef Stew

This turned out really well, did seem more like a very hearty soup tho than a stew. I actually made it up the day ahead of time to have ready for a dinner party and I got many compliments on it! I used a red pepper instead of the green since that's what I had on hand, added 3 stalks of celery and a small amount of corn and served it with corn bread.

Dave's Ultimate Guacamole

This was a quick and easy recipe. I used a potato masher since I like a little bit of chunks in my guacamole. I used green pepper sauce and also added 3 T. of fat free sour cream. It turned out very well and my husband loved it.

Turkey Tetrazzini II

I was looking for a way to use up some ground turkey and tried this. I made 1/2 the recipe and it made 4 very generous servings. My husband is not very fond of ground turkey and he went back for seconds and is taking some to work with him in the morning so I'm very pleased with how this turned out! The only thing I did different other than using ground is I added some fresh basil, parsley and about 1 C. of frozen brocolli, and did not have enough parm. cheese so also added some shredded colby. This is a good recipe to use up different veggies you have on hand.

Chocolate Plum Pudding Cake

I was looking for a recipe here to use up some plums I had, I found this and thought it sounded very good except it didn't use plums! I wanted to try it anyway and so what I did was pureed the plums I had and used that instead of the applesauce. The other things I did different was I used 2/3 part white flour and 1/3 part whole wheat rather than 50/50, I did add 1 t. vanilla and baked it in a bundt pan, rather than flour the pan I sprayed it good then dusted it with a little sugar/cinnamon (about 2 t.) this gives it a nice little crust. It did not need to bake as long in the bundt pan so I kept a close eye on it. A very good moist cake that is a bit healthier than some.

Sour Cream Peach Kuchen

This was very good and very easy to bake. I used fresh peaches and only used 2/3 of the crust to cover a 9x13 pan and had plenty. This also lasted well over several days.

Patriotic Pasta

Made this last night for dinner and it was a hit! I did not have any green onion so added 1/4 t. onion powder instead. My husband decided to come home for lunch today which he normally does not do, said he wanted to have some more of the pasta salad that he'd been thinking about! He's a picky eater so that is quite a testimat.

Ricotta Pie (Old Italian Recipe)

I only made half the recipe since it made so much! My husband loved it! I used splenda in place of the sugar and used pre-made pie crust. I also used the sugar free chocolate chips and chopped them up into smaller pieces before adding.

Washboard Cookies

These turned out very good. I ended up with 23 cookies and they were done in 15 minutes. Nice crispy crunch to them yet chewy in the center. A very simple recipe to mix together when you don't have a lot of time and nothing special you'd need to have on hand.

Chicken Chilaquiles

Made this tonight for supper and got rave reviews from my husband, he;s already requested that we have it again! I used fat free sour cream and had 4 blend mexican cheese so used that and had canned corn so used that rather than frozen. Instead of layering the different items I mixed everything together including 2/3 of the cheese, then put it all into the baking dish and sprinked the rest of the cheese on top along with some sliced up black olives. Thank you for a very good, quick and easy recipe that we will be fixing often. This would be a good dish to fix up ahead of time for a pot luck!

Asparagus Avocado Medley

This was a big hit! I didn't have any red onion but added half a sweet red pepper and a stalk of celery and a dash of onion powder. My husband and I had it for supper with baked talapia and the next day he ate all of the leftovers when I was at work! He said it was even better the next day.

A Farewell to Basil Fettuccine

I'm growing basil this summer so came here to find ways to use it, I had great results from this recipe! My husband is Italian and when I told him I'd made pasta I think he had some doubts! Well he told me at least 3 times how good this was!! He also went back for seconds eating every bit that was left!! I do not have a pasta maker so rolled it out, but the dough was very easy to work with and I used a pizza cutter to cut the strips. I'm sure my strips were wider and thicker than if I had a pasta maker, however it was fantastic in taste! If I wanted to have a dinner and impress people, this would be something I'd like to make. I had some leftover spagetti sauce in the freezer and that is what I served on it, next time I would like to try another sauce. I mixed up the dough in the morning and had it in the fridge for 3 hours before rolling it out. Every step was simple, yes it takes time to get it all done but very worth it. Next time I will make a double batch so I can freeze some of it. Thank you for posting this.

Belle's Hamburger Buns

Made these today and they turned out great! I used 1 C. wholewheat flour and the rest white flour. Reading the reviews I noticed the people talking about how dense they were. I think the mistake some are making is to add the entire 5 1/2 cups flour rather than judging when enough has been added. I also used honey instead of sugar and let the yeast mix with the warm liquid rather than add it to the flour, I baked 1 pan at a time getting 13 big buns! They will be very good for sandwiches or even just eat with butter and jam. A sure way to impress if you're doing a summer BBQ. Thank you Belle!

Italian Potato Salad

I made this for Easter Dinner. A nice change from using all the mayo, light cool and refreshing! I had some yellow peppers to use up so added half a one finely chopped and also 1 celery stalk finely chopped, didn't have onion so added onion powder instead.

Italian-Style Deviled Eggs

These turned out really well, I made them to take to a Christmas lunch and got rave reviews on them! The only thing different I did was to use green onion in place of the chives and I didn't have any mayo so used fat free miracle whip, also the sour cream I used was fat free so that helped out also. I will make them again and one woman who is known to not ever do any cooking actually asked me for the recpie!!!

Banana Cream Pie V

The pie had very good flavor. I cooked the filling up the night before and let it sit til the next morning in the fridge. When I checked it the next day the filling did not seem to have set up very well so I decided to heat it up again and added an extra T. of cornstarch, after it came to a boil I let it sit a few minutes in the pan while I sliced banana onto the bottom of the crust, I added half the filling and then sliced another banana and then the rest of the filling. I had a bit of filling left that I just put in the fridge to have as pudding. I opted to use the whipped topping rather than merengue, there was no way I was going to chance the filling failing after I'd worked so hard on it! The pie turned out very tasty and both my husband and I have enjoyed it. I can see where it would also be good as a coconut cream pie. The only reason I'm giving 4 stars is due to the trouble in getting it the right consistency.

Martha Washington Cookies

These turned out great! So easy to make with just a few ingredients. Yes they take a long time to bake but if you have the time, why not? Very very light. I will be making them again with the only change being I will be sure to spray the pan liner since a few did stick when removing them. I also got more cookies than it said, 24 good sized cookies rather than the 18. Usually I end up with less!

Real Homemade Tamales

My husband made these and had a few problems following the directions. Mixing up the masa dough he was not sure how much of the broth to use and they turned out very dry, had good flavor with the meat tho. He was wanting to throw it all out but we saved the tamales and today I placed the wrapped tamales in a baking dish and added beef broth and heated them up in the oven, they soaked up all the broth and tasted great! Next time we'll understand better about using more of the broth so it's like a soft cookie dough!

Scallops Mascarpone

This turned out very well. The reason I'm only giving 4 stars rather than 5 is because it called for way to much pasta! I only added half the amount of pasta and still it was a bit to much for me. I used 1/2 pound scallops and added shrimp to make up the difference. The sauce was very good. Only thing I would do different is cut back a bit more on pasta and add a few more vegetables such as red peppers, broccoli etc.
