No Sugar Added Cookies

I made these last night and was disappointed in how they turned out. I experimanted by baking 3 different types. The first pan I followed the recipe exactly, other than when I was mixing it up, I ground the oats in the food processer for a finer consistency. This pan had no real cookie flavor for us. I then decided to add 1/4 cup of raisins to the cookie dough to see if that would help. The next pan I baked was better with the raisins. I still had a little bit of the dough left so I decided to add in 2 packets of splenda and see how that helped. These cookies were much better! My husband and I both liked these. I know some people don't like splenda but we use it in place of sugar often. The cookies don't flatten out while baking so you have little half-balls, don't worry about leaving much space between them on the cookie sheet. Not sure if I'll ever try these again but if I do I think I'd try adding in some cocoa along with splenda, this could be a good base to work from.

Real Homemade Tamales

My husband made these and had a few problems following the directions. Mixing up the masa dough he was not sure how much of the broth to use and they turned out very dry, had good flavor with the meat tho. He was wanting to throw it all out but we saved the tamales and today I placed the wrapped tamales in a baking dish and added beef broth and heated them up in the oven, they soaked up all the broth and tasted great! Next time we'll understand better about using more of the broth so it's like a soft cookie dough!

Boston Brown Bread I

This turned out excellent! Instead of making 1 large loaf, I made 4 mini loaves and they were done after 30 minutes. A very quick and simple thing to make and I'll be making it again I'm sure.

Fruited Curry Chicken Salad

I made this for a family dinner to have with pita bread. Most people enjoyed it but my husband who is just so picky didn't seem to like it much, just said it was ok. I put it together a few days early for the flavors to meld.

Cherry Swirl Coffee Cake

Made this for a family dinner, everyone raved about it! I used spenda instead of the sugar and no sugar added pie filling. For the glaze I also used splenda and needed to use a bit more milk to get it thin enough for the glaze. I used 2 heart shaped cake pans instead of 1 long pan since I wanted to take a smaller cake to the dinner and have the other one here for us tomorrow. Vanilla ice cream went very good with it. My husband did say that the bottom crust could have been a bit thinner so next time I may divide the batter evenly between the bottom and top.

Rempel Family Meatloaf

I made this tonight for a family dinner and everybody loved it except for my husband but he hates all meatloaf! I mixed it up ahead of time in the morning when I had time and then just popped it in the oven later. Rather than ritz crackers I used cheezits and for the last bit of baking I covered the top with a ketchup/steaksauce/tobasco mixture.

Pastetnik Potatoes

I made these tonight for a family dinner and everybody loved them! I used Yukon Gold potatoes and the only thing I did different was I added a little dehidrated onions with the olive oil and a few dashes of paprika to the sauce. I served it with meatloaf and it complimented it very nicely. Next time I make it I will not make as much of the sauce, had quite a bit of it left over so think I only need to make 2/3rds of that.

Italian-Style Deviled Eggs

These turned out really well, I made them to take to a Christmas lunch and got rave reviews on them! The only thing different I did was to use green onion in place of the chives and I didn't have any mayo so used fat free miracle whip, also the sour cream I used was fat free so that helped out also. I will make them again and one woman who is known to not ever do any cooking actually asked me for the recpie!!!

Big Soft Ginger Cookies

These are yummy!! I needed to bake up some cookies at short notice and these were fast and simple. The first pan I did the cookies spread out quite a bit so on the other pans I didn't flatten them out quite as much. Really nice chewy quality to them, will make again and next time will try the orange juice instead of the water as someone suggested.

Savory Vegetable Beef Stew

This turned out really well, did seem more like a very hearty soup tho than a stew. I actually made it up the day ahead of time to have ready for a dinner party and I got many compliments on it! I used a red pepper instead of the green since that's what I had on hand, added 3 stalks of celery and a small amount of corn and served it with corn bread.

The Best Chocolate Cake You Ever Ate

I loved this cake! I made it today for a dinner party and everybody seemed to love it just as much as I did. I did make a change since I don't cook with sugar, I substituted the sugar for splenda. I was not sure how that would work with the powdered sugar in the frosting but it turned out really good! I also took anothers suggestion and used 2 sticks of butter for the cake batter instead of using half oil. This one is a keep, I'm sure I'll be making it again!

Strawberry Oat Muffins

I made these last week-end and they turned out quite well, I did make a substitution using splenda instead of the regular sugar. Since I made a larger batch (had more strawberries that needed to be used up) I didn't have enough muffin tins for all so made 12 muffins and 2 loafs I liked the muffins better than the bread, the bread did not slice well and was to moist in the middle, still yummy tho!

Sour Cream Apple Pie Deluxe

I love this pie! Made it at home using fresh pears, then made a couple pies at work and they loved it also. Have made it again at home and wanted to mention a mistake I made, had my mind elsewhere and I added the topping to the pie when I was putting it into the oven to begin baking. When I realised what I'd done I was worried it would ruin the pie but it actually turned out better, the topping blended into the sourcream filling and was a rich brown color but did not burn so I think from now on I will just put the topping on at the beginning. Next time I made it I'm going to use blueberries and thinking it would also be very tasty with strawberries.
