Italian Creme Layer Cake

I made this for a birthday cake and it turned out so well. I did make a few changes. Instead of making a layer cake, after reading about how many problems others had with the cake sticking to the pan, I used a 9x13 pan. I did not have any coconut so I used some shredded carrot, 1 1/2 large carrot and I did not have any nuts, in the frosting I added 1/2 t. almond extract. For the frosting I used fat free cream cheese and for all the sugars I use splenda, only needing 2 cups of it for the frosting! This turned out to be a very rich tasty cake and the amount of frosting was very generous to frost the top with. If I had any nuts I would have sprinkled some on top.

Grandma VanDoren's White Bread

Made this earlier this week and it turned out great! I made 2 loaves and 1 pan of dinner rolls, the only thing I did different was I did not have quite 3 T. of yeast since I had 3 yeast packets but it rose great, and I added all the flour when mixing it and let it rise twice. This made wonderful toast and I'll be sure to make it again.

Mrs. Sigg's Snickerdoodles

I made these at work and heard rave reviews!!! One officer said they are the best cookies ever and is begging for them again so I'm sure they're a cookie I'll be making often. The only thing I did different was I used more sugar in the sugar/cinnamon mix to roll them in, and I use a convection oven at work so baked them at 325 degrees using low fan for 12 minutes.

Pineapple Pie IV

I used fresh pineapple and used a bit more than 2 Cups and this turned out so tasty! Was great warm about an hour out of the oven and also good the next day chilled but I think it was best when warm.

Delicious Ham and Potato Soup

This was excellent! I halfed the recipe since it was just my husband and I and now I regret that, it was even better the next day and not much left. Will be sure to make it again soon.

Cherry Cheese Pie

This turned out very well. I used no sugar added cherry pie filling and fat free cream cheese and splenda in place of the sugar yet it came out tasting very rich and decadent.I also added just a 1/2 t. of lemon juice to the cream cheese mixture. My husband has already requested I make it to take to family dinner because he knows his father who is diabetic will love it. The one thing I'll do different next time is increase the recipe for the crust, it barely went up the sides of the piepan, the crust itself was very tasty and quick to make!

Reuben Casserole

I made this last night. My husband and I both enjoy reubens so thought it would be a good dish. My husband did not like it at all, the sourkraute was way to overpowering for him. Maybe if I had used only half the amount of the kraute it would have been better. Not sure if I'll ever try this again with a few tweeks.

Key Lime Pie VI

I was very pleased with this pie! I used splenda and it worked very well for me. It took 9 of the key limes to get the juice I needed, I added the lime juice to the water at the beginning. A very tasty refreshing pie and I'll be sure to make it again.

Calamari

Lemon Garlic Tilapia

This turned out very well, I used half butter and half olive oil and heated that up in the microwave with the chopped garlic. A quick and easy recipe that I'll be sure and use again.

Asparagus Avocado Medley

This was a big hit! I didn't have any red onion but added half a sweet red pepper and a stalk of celery and a dash of onion powder. My husband and I had it for supper with baked talapia and the next day he ate all of the leftovers when I was at work! He said it was even better the next day.

Best Ever Muffins

I made these this morning, easy to make and very versitile. I mashed up 1 small very ripe banana for half of the batter and added a small handful of choc chips, with the other batter I added 1/4 c. of dried cranberries, both came out very tasty!

Citrus Apple Pie

Baked this pie and had a piece a few hours out of the oven and the next day also. It was ok but did not blow us away. Has a subtle orange marmalade taste and I like orange marmalade so that was ok with me, just better apple pie recipes out there. The bottom crust was very soggy and doughy and it was difficult to get it out of the pan without falling apart. It did not call for cinnamon and I was tempted to add it anyway but didn't, now I regret it.

English Muffin Loaves

I was very pleased with how this turned out. I wanted to make eggs benedict for breakfast the next morning and found this recipe late last night. I did not have any regular milk on hand so used 1 cup of milk from powdered and 1 cup of buttermilk. Made 2 good sized loaves. Very easy to mix together. My husband was really impressed with the eggs benedict this morning, I had some left over hollendase sauce and just added a little cream to it to thin and diced up some left over ham, toasted the bread and poached eggs and we had an excellent meal! When slicing the bread, I found it easier to slice if I turned it upside down.

Slow Cooker Beef Stew I

I made this exactly as written except did not have any celery so I used fresh mushrooms instead. My husband and I both enjoyed it very much. Was quick and easy to put together and the house smelled wonderful during the day when it was cooking! Will deffinatly be making it again.

Dutch Apple Pie

I've made this twice, first time I did not use the parchment paper and the edges were over cooked, second time I used the paper and it was much better with a golden color. I used splenda in place of the sugar and added just a dash of nutmeg also.

Chicken Fried Chicken

Excellent recipe! I cut it down to 2 servings for 2 big chicken breasts I had and let them sit in buttermilk for several hours before cooking. Next time I think I'll cut the breasts in half before coating.

Best Big, Fat, Chewy Chocolate Chip Cookie

I made up a very large batch of these at work a week ago, 4X's the recipe. I baked 1 pan then and scooped the rest of the dough and froze until I'd need to bake them a week later. The first pan I baked should have been baked a little bit longer, they looked done but the center was still way to soft. It takes me a while to figure the time in the oven since I'm using a convection oven at work. Yesterday I baked the rest of the cookies that had been frozen for a week and they were wonderful, baked at 325 for a total of 13 minutes in the convection oven, they get darker than the usual c.c. cookie but I think that's due to more brown sugar. Everyone who ate them at work loved them and 1 officer told me these are the best cookies I've baked! A day later and they were still nice and chewy, very addictive! At work I don't have real butter or real vanilla but they still turned out wonderful.
