The Best Chicken Fried Steak

I made this as a surprise for my husband who loves cfs but I've never made it for him. Many times when he orders it he is disappointed. Well he loved this! Went back for seconds and wont complain when we have the leftovers tonight for dinner. I double dipped the breading and had no problem with the coating staying on and instead of shortning I used peanut oil for the frying, I also seasoned the meat before doing the coating. Next time I make it I think I'll cut the steaks in half before breading them, they were so big and I only ate 1/2 of one.

Country Apple Dumplings

I was a little skeptical about this but it turned out lovely! I only made 1/2 the recipe and wish I'd mmade the full one! I used 1/2 C. of splenda and 2 T. of splenda brown sugar and added a little vanilla also, I think I could use a little less splenda next time. The sauce was so good, you really wanted to pick up the bowl and lick it. It was even better the next day.

Roasted Rosemary Cauliflower

I made this tonight and my husband loved it! He went back for seconds also. I only used half a head of cauliflower but kept the oil and seasonings the same since I also added 2 stalks of celery, about 1/4 of a yellow pepper and 3 small red potatoes quartered, the last 5 minutes of roasting I added a handful of cherry tomatoes cut in half, also added the garlic powder as some did. Served this with chicken breasts for a low fat, healthy but very tasty meal! This is a keeper which I'll be happy to use again, thank you!

Sour Cream Peach Kuchen

This was very good and very easy to bake. I used fresh peaches and only used 2/3 of the crust to cover a 9x13 pan and had plenty. This also lasted well over several days.

Butter Balls I

These turned out well but I did not follow directions exactly. I used a medium cookie scoop rather than rolling them into balls and just dipped then in a white sugar brown sugar blend before putting them on the baking sheet. Just seemed a simpler way of doing it but with the same results.

Favorite Banana Blueberry Quick Bread

Made this today and was not completely happy with it. I made 3 mini loaves rather than 1 large since so many members mentioned the problem with it cooking in the middle. I increased the blueberries to 3/4 C. and used butter flavored crisco. I used splenda for half the sugar and the splenda brown sugar blend for the other halfand added 1/2 t. vanilla and a few dashed of cinnamon. When I finished mixing it all up the batter was extremely thick so added a little over 1 T. of sour cream which helped a bit. Rather than using flour for the pans, I sprayed them with pan spray and then dusted them with a mixture of cinnamon and splenda, gives a nice sugary crispness to the bottom and they come out of the pan very well. I love banana bread and love blueberries and while this was ok, it didn't blow me away. If I try it again I think I would decrease the oats and possibly use buttermilk to make a thinner batter.

Banana Bread Cookies

Very good cookies! I did a few changes however, using half brown sugar, double the banana, added 1 C. oatmeal and also added chocolate chips. I'm expecting them to be even better the next day just the way banana bread is!

Fresh Coconut Cake

Patriotic Pasta

Made this last night for dinner and it was a hit! I did not have any green onion so added 1/4 t. onion powder instead. My husband decided to come home for lunch today which he normally does not do, said he wanted to have some more of the pasta salad that he'd been thinking about! He's a picky eater so that is quite a testimat.

Banana Cream Pie V

The pie had very good flavor. I cooked the filling up the night before and let it sit til the next morning in the fridge. When I checked it the next day the filling did not seem to have set up very well so I decided to heat it up again and added an extra T. of cornstarch, after it came to a boil I let it sit a few minutes in the pan while I sliced banana onto the bottom of the crust, I added half the filling and then sliced another banana and then the rest of the filling. I had a bit of filling left that I just put in the fridge to have as pudding. I opted to use the whipped topping rather than merengue, there was no way I was going to chance the filling failing after I'd worked so hard on it! The pie turned out very tasty and both my husband and I have enjoyed it. I can see where it would also be good as a coconut cream pie. The only reason I'm giving 4 stars is due to the trouble in getting it the right consistency.

Big-Batch Butterscotch Cookies

These turned out really well, I needed a big batch of cookies and actually doubled the recipe and ended up with over 90 big cookies! Easy to get it all mixed together which was a plus.

Cherry Crumble

Turned out really well. I used a pie tin and used the splenda brown sugar and no sugar added cherry pie filling. A nice crunchy texture to it and my husband really enjoyed it even after a few days.

World's Best Lasagna

I made this today as a surprise for my husband since I've never made him homemade lasagna before. It turned out great. I simmered the sauce for 3 hours and did not add any salt to it and it was salty enough for us with all the cheese in it. I still have half the sauce left which I'll freeze and my husband already put in a request to take some to work with him in the morning! He's Italian and prides himself on the sauce he makes but I could tell he was really enjoying this and went back for seconds, he just wont admit that I, a non-Italian could make something so good!

Michael's Foccacia Bread

This turned out great! I added a few different spices and some shredded mexican cheese blend to the dough and only used 1 t. of kosher salt for the top. I made 3 loaves and 1 is already gone! I will deffinatly be making this again.

Washboard Cookies

These turned out very good. I ended up with 23 cookies and they were done in 15 minutes. Nice crispy crunch to them yet chewy in the center. A very simple recipe to mix together when you don't have a lot of time and nothing special you'd need to have on hand.

Chocolate Brittle Surprise

Wonderful treat! I used graham crackers and half semi-sweet chips and half butterscotch chips then sprinkled chopped macadamia nuts oohh so good! I will deffinatly be making them again. Next time I may try coconut on top instead of nuts.
