Whole Wheat Blueberry Pancakes

Reviewed: Jul. 25, 2010
Made these today and they turned out very well. I used splenda instead of sugar. I'm trying to eat healthier so this was a better choice than making regular pancakes and even my husband who does not like wholewheat bread at all and said they were good! Since it was only 2 of us I have frozen the leftovers so when I want a quick and easy breakfast I can just pull them out of the freezer!

Turkey Tetrazzini II

Reviewed: Jul. 6, 2010
I was looking for a way to use up some ground turkey and tried this. I made 1/2 the recipe and it made 4 very generous servings. My husband is not very fond of ground turkey and he went back for seconds and is taking some to work with him in the morning so I'm very pleased with how this turned out! The only thing I did different other than using ground is I added some fresh basil, parsley and about 1 C. of frozen brocolli, and did not have enough parm. cheese so also added some shredded colby. This is a good recipe to use up different veggies you have on hand.

A Farewell to Basil Fettuccine

Reviewed: Jun. 24, 2010
I'm growing basil this summer so came here to find ways to use it, I had great results from this recipe! My husband is Italian and when I told him I'd made pasta I think he had some doubts! Well he told me at least 3 times how good this was!! He also went back for seconds eating every bit that was left!! I do not have a pasta maker so rolled it out, but the dough was very easy to work with and I used a pizza cutter to cut the strips. I'm sure my strips were wider and thicker than if I had a pasta maker, however it was fantastic in taste! If I wanted to have a dinner and impress people, this would be something I'd like to make. I had some leftover spagetti sauce in the freezer and that is what I served on it, next time I would like to try another sauce. I mixed up the dough in the morning and had it in the fridge for 3 hours before rolling it out. Every step was simple, yes it takes time to get it all done but very worth it. Next time I will make a double batch so I can freeze some of it. Thank you for posting this.

Chocolate Plum Pudding Cake

Reviewed: Jun. 11, 2010
I was looking for a recipe here to use up some plums I had, I found this and thought it sounded very good except it didn't use plums! I wanted to try it anyway and so what I did was pureed the plums I had and used that instead of the applesauce. The other things I did different was I used 2/3 part white flour and 1/3 part whole wheat rather than 50/50, I did add 1 t. vanilla and baked it in a bundt pan, rather than flour the pan I sprayed it good then dusted it with a little sugar/cinnamon (about 2 t.) this gives it a nice little crust. It did not need to bake as long in the bundt pan so I kept a close eye on it. A very good moist cake that is a bit healthier than some.

Chicken Marsala

Reviewed: Jun. 7, 2010
Excellent recipe! I did not use sherry, just increased the wine. I had 2 breasts which I flattened then cut each one in half, if I was doing 4 breasts I would have doubled the sauce, it was all gone for just the 2! I will be making this again, my husband loved it.

Belle's Hamburger Buns

Reviewed: May 10, 2010
Made these today and they turned out great! I used 1 C. wholewheat flour and the rest white flour. Reading the reviews I noticed the people talking about how dense they were. I think the mistake some are making is to add the entire 5 1/2 cups flour rather than judging when enough has been added. I also used honey instead of sugar and let the yeast mix with the warm liquid rather than add it to the flour, I baked 1 pan at a time getting 13 big buns! They will be very good for sandwiches or even just eat with butter and jam. A sure way to impress if you're doing a summer BBQ. Thank you Belle!

Chocolate Cream Pie II

Reviewed: Apr. 8, 2010
I had high hopes for this pie. After reading the reviews I used 4 T. cornstarch thinking that would take care of the problem of it not firming up. Well it still was way to soft, it was a soft pudding in a pie crust. I also have to agree with the people saying it was to sweet. Even as a chocolate pudding it was just to sweet for me, and I have a big sweet tooth! If I were ever going to try it again I would deffinatly decrease the sugar and add more corn starch, but I doubt I will try it again.

Scallops Mascarpone

Reviewed: Mar. 16, 2010
This turned out very well. The reason I'm only giving 4 stars rather than 5 is because it called for way to much pasta! I only added half the amount of pasta and still it was a bit to much for me. I used 1/2 pound scallops and added shrimp to make up the difference. The sauce was very good. Only thing I would do different is cut back a bit more on pasta and add a few more vegetables such as red peppers, broccoli etc.

Sugar Cookie Icing

Reviewed: Feb. 24, 2010
This worked great, thank you. The only thing I did different was use honey in place of the corn syrup. I decorated cookies to send to my niece for Valentines Day, they loved them and she thought I'd bought them at a fancy bakery!

Cream Cheese Pound Cake III

Reviewed: Feb. 23, 2010
I'm giving it 5 stars even though it did not turn out perfectly for me. I made 1/2 a recipe and baked it in a loaf pan, taking others suggestion to increase vanilla and I also added a little almond extract. I baked it at 300 for 1 hour 15 min. after I took it out of the oven to cook the center sank down and the cake did not seem to be done in the middle so I put it back in the oven. The center never did seem to get baked completely even after quite a bit of time in the oven. The outer crust was great and the flavor was great! I'm going to try and make this again, only using smaller pans and baking at the 325 the recipe calls for.

Fluffy Peanut Butter Frosting

Reviewed: Feb. 19, 2010
I made this today and it turned out very well! I did have to add a little more milk and also added a little vanilla. Worked great to frost brownies with. It took a while to get it the right consistency but since I was using a stand mixer I was able to just get it going and let it do the work.

Grandma Johnson's Scones

Reviewed: Feb. 15, 2010
A great recipe! My favorite way to make them is with craisins which I soak in very hot water to plump them up, then after they bake I brush them with a glaze made with powdered sugar and orange juice.

World's Best Scones! From Scotland to the Savoy to the U.S.

I have made these 3 times now. Have been very happy with how they come out each time! I add 1/4 t. lemon zest to the dry ingredients and when they're out of the oven I mix up a glaze with powdered sugar and lemon juice to brush on the top. Thank you for the recipe!

Refrigerator Cookies III

Reviewed: Feb. 1, 2010
Very good recipe! I divided the dough into 3 parts and shaped into logs, then used 3 different coatings, 1 was colored sugar, 1 was finely chopped pecans and 1 was cinnamon sugar. All were very tasty but out of the 3 I really liked the ones with pecans the best. I also melted some chocolate to drizzle over after they had cooled, using chocolate chips with a little peanutbutter for the pecans and cinnamon ones, and white chocolate chips with a little butter for the colored sugar ones. Made for a very nice presentation and these seemed to be a hit by all! Thank you for this recipe I will be making them again and actually thinking of making some up to send my my niece for Valentines Day, that will be fun to decorate and they are a cookie that holds up well with time.

Apple Pie by Grandma Ople

Reviewed: Jan. 25, 2010
I believe this is my best apple pie yet! So far I have made it 3 times, first time I poured the sauce over the apples but it was rather messy, still tasted great! second time I mixed the sauce with the apples first and it worked great and everyone raved about it. Next time I mixed most of the sauce with the apples but brushed a bit on top of the crust also which really makes it look fantastic! I don't do a lattice crust, I use a full crust but use a pretty snowflake cookie cutter to cut out the middle which makes for a nice presentation. I also add 2 t. of lemon juice and a few dashes of cinnamon to the apple mix. Thank you and bless your Grandma for this recipe!

Honey Baked Chicken II

Reviewed: Jan. 21, 2010
I made this using 5 chicken breasts still with bones and skin. I cut the butter in half and used half salt, half seasoning salt. I covered it with foil for 45 minutes and then basted and cooked the last 30 minutes uncovered. It turned out very moist! Next time I make it I will make the sauce ahead of time and let it marinate first. My husband ate another piece the next day and commented on how good it was and how it really soaked up the flavors.

Very good flavor. I used 1 can of crab meat and also chopped up 5 large pre-cooked shrimp. I used half of an orange pepper also and 2 T of chopped scallion in place of the green onion.

Empire State Muffins

Reviewed: Dec. 22, 2009
Good recipe that is forgiving when changes must be made. I did not have any carrots and not quite 2 cups of shredded apple, I had 2 small apples that needed using up and also so fresh cranberries (not quite 1 C) I also had 2 over ripe bananas so I mashed them up to put in it, and then also added 2 oz of cream cheese, cut into tiny bits that I folded into the batter. This resulted in a yummy muffin! I also used splenda instead of sugar, using just a little less than called for. This recipe would be good for using several things up when you have odds and ends left over.
