Homesteader Cornbread

I made this recipe exactly as written and beat the batter for 10+ minutes. I didn't care for this recipe at all. The cornbread was very dense after cooked and did not have enough corn flavor.

Imitation Meatloaf

This recipe is great! I added some italian seasoning, pepper, and garlic. I also prepared the loaf pan with a layer of brown sugar and then some ketchup. Then I put the meatloaf mixture on top of that. Makes it really tasty after it's cooked.

Slow Cooker Baked Beans

This is a great recipe. I have made this several times now and people love it. I substitute salt pork for the ham hocks but otherwise I follow exactly.

BBQ Pork for Sandwiches

This recipe is so easy and excellent. I used a pork shoulder instead of the ribs which turned out very tender. I used Big Al's KC BBQ sauce recipe off this site which was also outstanding. Will make again.

Creamy Chocolate Frosting

This is great tasting chocolate frosting! I used half and half instead of evaporated milk. Other than that change, I followed the recipe exactly. There was just enough frosting to frost the top and sides of a 2-layer cake. It wouldn't have been enough to frost the inside but I made a Boston Cream pie so I had pastry cream for the middle which worked out well.

Pastry Cream

This pastry cream tastes great. Just like a bakery. I followed this recipe exactly except I used vanilla extract at the end instead of the cooking with the vanilla bean. I did read some earlier comments stating that this recipe was too "eggy" and they used less egg yolks. I almost cut back on the egg yolks but I did end up putting all 6 yolks. I am glad I did. This was perfect. Keep in mind, this recipe is not for vanilla pudding, it is for pastry cream. Keep all the yolks and butter. I stirred constantly and didn't have any lumps so no need to strain it.

No Bake Peanut Butter Pie

This pie was easy to make and it tasted great. I halved the recipe to make one pie and used an Oreo cookie crust and topped with crushed peanut butter cups and real whipped cream. I also left mine in the fridge and didn't freeze it. It was really like a mousse this way and did not hold the form to well but still tasted great. Next time I will freeze it.

These were so perfect for Halloween. They were a huge hit at the party. I read the reviews regarding how these cookies were bland and I almost didn't make them. I'm glad I did make them. They tasted excellent and I made them exactly as the recipe stated. I didn't find them bland at all. These are shortbread cookies after all. They aren't suppose to be sugary. Definitely a huge hit!
