Quinoa and Black Beans

*Really good*, especially considering the simplicity of the recipe. The flavors all come together to create something that is really tasty, and quite kid-friendly (all my kids loved it, from the 2 year old to the 6 year old). Very easy to make, and I almost always have the ingredients on hand. Also, a one pot dish! The only substitution I make is I switch out the frozen corn with TJs soycattash frozen veggie blend, only because I rarely have straight up frozen corn on hand. It's delicious!

Eileen's Spicy Gingerbread Men

This recipe was amazing! I did not have ginger, so I substituted the spice mixture for 3 teaspoons of pumpkin pie spice. Kept everything else in the recipe the same. It was perfect; thanks for sharing it!

Too Much Chocolate Cake

I made this into cupcakes for my son's 2nd birthday. They were a huge hit! So tasty, and super easy, too. I frosted them using the Cream Cheese frosting II recipe on this website. Thanks for sharing this recipe, it is truly a keeper!

Best Chocolate Chip Cookies

Amazing chocolate chip cookies! Easy to make and they turned out perfectly. My husband and kiddos loved them. This will be my go-to choc chip recipe from now on, though I will most likely increase the salt from 1/2 teaspoon to 1 teaspoon.

Sparkling Punch

Made this punch for my son's 4th birthday. The only thing I changed was omitting the sugar and the ice cubes (I'd stored the club soda and apple cider in the fridge, so they were cold enough). It turned out amazingly well - not too crazy-sweet, and both the kids and adults loved it. Will definitely make it again.

Turkey and Quinoa Meatloaf

I thought this recipe was really good but a tad too salty. Next time I'll cut down the salt to 1 teaspoon. Besides that, no complaints. Very clever use of quinoa, and the entire family gobbled it up. With the salt modification, it's definitely a keeper!

Sweet Potato Casserole II

I made this following the recipe exactly (no subs, no additions), and brought it to my son's preschool Thanksgiving lunch. I thought it was pretty good, although something seemed to be lacking... the flavor was a bit flat. Maybe it needed some salt? (I know it's a sweet dish, but even dessert recipes call for at least some salt.) Anyway, all in all not bad, although I will probably search for another recipe next year.
