My hubby loved this chicken. I grilled it and served it with baked sweet potatoes. I found the original recipe didn't have enough marinade for all the chicken. Plus I didn't have any apricot jam so I used some chicken broth and added more honey and mustard. It turned out great! WILL MAKE AGAIN

Potato and Bean Enchiladas

WOW !!! DELISH. I saw these and thought they looked good but sounded like it might be a weird combination but I was wrong!! they were sooo good! The tomatillo salsa with the potato and beans were a perfect combo. The queso fresco was a perfect cheese too! Will be making again for sure!!! I added 1 1/2 tsp of salt to the onion/tomatillo mixture

Best Big, Fat, Chewy Chocolate Chip Cookie

THE BEST COOKIES EVER!! I get asked for this recipe every time I make them!! They turn out perfect every time. I love in very humid conditions so sometimes I have to add 1/4 to 1/2 c more flour so the dough won't be so thin and spread. But I eyeball it - not too wet or too thick. Also found that light brown sugar is the best dark brown makes my cookies spread too much!! I even chill my dough if I have time but if not no biggie =) TRY THEM TODAY YOU WILL LOVE THEM!!!!
