Baked Salmon Fillets Dijon

This recipe has wow factor!!! It uses a minimal number of ingredients, preparation takes just a few minutes, and because it's baked on foil, you only have to wash 3 or 4 kitchen tools. It goes from "what can we eat?" to flavorful gourmet in less than 1/2 hour, and not much clean-up afterwards. I used fresh wild salmon, sweet-hot mustard (the finished dish wasn't hot at all), sea salt, fresh ground pepper, garlic & herb bread crumbs, and of course, real butter. I agree with REBECCAANNIE that adding the crumbs to melted better before topping the salmon makes it that much easier and more consistent. I also broiled it for 2 minutes at the end. The mustard is not overwhelming at all, it complements the fish perfectly. The buttered bread crumbs were delicious and the fish was moist. I baked a 1-1/2 pound salmon fillet this way and it vanished in no time. This recipe would take individual variations just fine. For simplicity, flavor, and ease of preparation, you can't go wrong with this one.

Zucchini with Dill Weed and Garlic-Yogurt Sauce

I can't describe how delicious this recipe is. My teenage daughter said "I didn't think I'd like it but I did!--this is my favorite meal!" I served it with pan-seared sea bass and it was a perfect refreshing healthy summer meal. I confess I didn't have fresh dill so used 1/2 amount of dried dillweed and it was outstanding. I found that in a skillet the small amount of rice with water doesn't really boil so the zucchini really did saute in the olive oil and I had to cover the pan in order for the rice to get tender. Ingredients already in kitchen, minimal prep time, fabulous blend of flavors....I put it in my "Family Loved It" file!
