Easy Indian Butter Chicken
I enjoyed this so much! I couldn't find tandoori masala, so I just used a Penzey's curry spice blend instead. I will make this again, so I will keep my eyes peeled for the tandoori masala, but it turned out beautifully even with the substitution. I also used cut up chicken thighs instead of breasts. Otherwise I followed the recipe exactly. I'm not interested in low-fat "diet food", so I used all 3 cups of cream as called for, and the whole cup of butter... so rich and delicious! Can't wait to make it again!

Impossible Pumpkin Pie
I've never ever uttered the sentence "the crust is the best part" about any pie, pizza, or any other crust-bearing food, so this recipe seemed ideal. The "crust" it formed seemed limited to just the edge at the very top and a thin 'crusty' layer across the entire top of the pie - the sides and bottom of the pie didn't have any sort of crust. Strange! I would not serve this or bring it to a potluck, but it's the kind of thing I'd make again if I just want a pumpkin pie in the fridge to munch on all week.

Baklava
So, I messed this up a little, but the good news is, even if you mess up, you'll still end up with something deliciously baklava-like! I thought I made it just as the recipe said (only change - baking at 325), but I ran out of nuts so I put on the top layer of phyllo (8 sheets deep). Seems I should have used the whole package up, but I had LOTS leftover. Problem - my walnut layers were too thick! I probably used more per layer than the recipe said! Next time I will know better. And there will be a next time! This is a whole lot of yum for such small effort, and there are variations I want to try that I've read in the reviews here. DON'T be scared of phyllo dough, and DON'T be scared of making baklava!
