Cashew Raisin Rice Pilaf

Excellent, I don't make any changes except I use olive oil instead of butter. The wild rice needs to cook a little longer than this recipe states. I usually cook it an hour. I've done this for Thanksgiving or just to have around for a side--this recipe makes a TON. I love it!

Baked Potato Soup

I screwed this up and it was awesome!!! First of all...I did not bake the potatoes...duh! So when I realized I should have done that, I held off on adding the half and half until the potatoes got soft. Also, I didn't read the reviews (b/c I hate when people are like 'oh yeah, great after 28 adjustments), and I added the full amount of basil...way too much. Only add half the basil. The only reason mine was ok was b/c I had to add extra milk in the process of cooking the potatoes. BUT the basil adds a really interesting flavor to the soup that most potato soups don't have. Also, I skipped the bacon part b/c someone in my office (we had soup day) is a vegetarian. Everyone who brought soup had leftover soup, I had NONE. Very good recipe and will definitely make again!

Country Soup in a Jar

This is beautiful and it does make a delicious soup, but the directions are all wrong! You have to cook this for at least two hours to get the peas and lentils soft, I had to use twice as much water and it was still way thicker than I like my soup (it was still really good though). There is no way you can put the pasta in at the beginning or you will have a mess!! BOO!! I even think you should make this in pint jars and nont include the pasta in the jar, but include it in the recipe as something to add. I did make up a bunch of these and I am going to tweak the directions and also tell the receivers that they can refer to this site for suggestions.

Broiled Scallops

FABULOUS! Not only is this really good-my husband LOVED them, this is so easy that you can wow anybody with very little effort. I added parmesean cheese on top and cracked pepper. Could have done without the cracked pepper and just used regular b/c cracked is pretty strong. Scallops have such a mild flavor, and I think the less you add to them the better and that is why this recipe is so good b/c there is not 500 ingredients.

Fra Diavolo Sauce With Pasta

I made this exactly as the recipe is written with the addition of 1/2 cup of white wine. This was delicious! We like things spicy and the tsp of red pepper flakes definitely gives this dish kick. I was able to use fresh tomatoes from my garden. I will definitely make again.

BBQ Pork for Sandwiches

The meat came out fine but it was totally bland. I used a chipotle flavored bbq sauce and there was not enough flavor for me. It needs something like red pepper flakes, apple cider vinegar, onion, chili sauce...something to give it a kick b/c it's just boring pork.

Salisbury Steak

I had really high hopes for this, but I was kind of disappoionted. My husband liked it, I thought it was ok, one child ate it, the other two hated it...like it made them gag. So, I probably won't make it again.

Coffee Roasted Beef Chuck

I had really high hopes for this recipe b/c the aroma in my house while it was cooking was to die for, but I really did not think it was that great. Enough people have made this with good results so I'm not sure why mine turned out like it did. I only had a 2 lb roast so I halved everything and only cooked it for 1 1/2 hours, and it was done, but it was a little tough. My kids liked the meat but were otherwise not wild about it. I might try it again though.

Carrot Cake

The cake part of this was really, really fabulous! The icing was a disaster which is why I am giving it 4 stars. The directions were not very clear, I think you are supposed to whip the heavy cream for awhile. It does not say to, so I didn't and I wound up with a runny mess. So I threw it out and used the cream cheese frosting II recipe and that was great. I hate when reviewers are like, 'oh this was a great recipe but only with my 500 adjustments...' This is a GREAT recipe, and I added two things: 1)doubled the carrots b/c reviewers consistently state there was not enough; and 2) I added a ripe bananna. It took me 50 minutes to bake it. I will definitely do this again!

Bev's Chocolate Pie

I have been making this pie for years. It is a great tasting chocolate pie, but the meringue was never puffy enough and I finally figured out why!! The sugar measurement is completly off in this recipe. After some research, I learned that you should have no lesss that 2 Tablespoons of sugar per egg white in a meringue. There was never enough sugar! Otherwise,this is a terrific pie that we have been enjoying for almost a decade!
