Hobo Pie

I love these! My family also calls them Hobo Pies. Our favorites are pizza pies & cherry pies. For pizza pies, butter the bread as usual, then use ready-to-use pizza sauce, mozarella cheese, and pepperoni. Another idea is to use peanut butter, a marshmallow, and a chocolate bar for a Rocky Road treat. Be careful with the irons and the pies because they are VERY HOT.

These were great. I read a review that said not to bake it in an 8x8, but I halved the recipe and it turned out great! Would have been even better with some pecans! Yum!

Guacamole

Our favorite guacamole recipe by far. This blows the $4 bags of guac at the store away... Use freshest ingredients possible for best taste. Using a blender or food processor is the best way I've found for getting the avocado really creamy before adding the rest of the ingredients.

Oatmeal Peanut Butter Cookies III

The rich peanut butter of the cookies melts into the softer, subtle sweetness of the peanut butter cream filling. So good! Even better the next day. I'm not a peanut butter cookie fan. I made them for my husband, but I probably ate more than he did! Yum!

Special Buttercream Frosting

This is delicious, but I completely agree with other reviewers who have recommended to split the shortening half-and-half with butter (1 C. each). The consistency makes it much easier to work with and it doesn't taste so greasy. Yum! ::Update:: Just used this frosting again for an owl cake. It works fantastic in a frosting tube! I just bought a nordicware cupcake froster. The frosting flows right out of it. Wonderful!

Awesome Slow Cooker Pot Roast

So deliciously easy. I used a 4.5 lb roast. I followed the recipe as stated, but I first cut the roast into four pieces and then seared it on the stove in a drop of olive oil before adding it to the slow cooker and soup mixture. I substituted low sodium beef broth for the water. I cooked it on low for five hours, then added carrots, cubed potatoes, onion, and mushrooms. I then cooked it for an additional 2.5 hours. The vegetables were soft, but not mushy. Perfect! My husband and I loved it. He said he wished there was celery as well. I forgot it. I did have trouble with the gravy being thin, but mixing a bit of cornstarch with cold water and adding to the hot gravy helped to thicken it up. Wish I had added some garlic cloves too. It was simply delicious, and the seasonings are mild enough that the additional leftovers can be used for BBQ sandwiches, etc.

Oven-Roasted Asparagus

Hating asparagus since I was a child, this recipe has transformed my opinion of it. It is delicious when prepared this way! Many have said that the timing is too long, but I found 12-15 minutes to be perfect. I used a Pampered Chef grill basket lined with tin foil. I also tossed in some mushrooms. Then I loosely covered the top with tin foil as well. Yum!

Best Chocolate Chip Cookies

Tollhouse Cookies, beat this! I always thought Tollhouse was the end-all when it came to chocolate chip cookies, but this recipe is amazing! Crispy edges. Chewy, gooey melted chocolate centers. You really can't go wrong. My mouth starts watering just thinking about them.

Black Bean and Salsa Soup

Simplicity and taste are what make this five stars for me. My husband and I love the black bean soup at a local restaurant, and this tastes very similar. Great for a night when we don't want to spend the money on a fancy dinner and a tip.

Chicken Stir-Fry

Flavor was a little on the light side, so I added a little extra bouillon. I was out of broccoli, so I substituted sliced green pepper, water chestnuts, and pineapple chunks. The flavor reminded me a little of chow mein. Loved the meat marinade! Perfect amount of ginger since I'm not a big fan of it.

Restaurant Style Egg Drop Soup

I thought this was really good. Next time I will add some carrot shreds and maybe some other vegetables with less egg. I prefer my egg drop soup to have more broth. Other than that, the recipe was delicious!

Banana Sour Cream Bread

Beware cooking temps & times! I didn't read reviews and almost ended up with gooey bread. I had baked two loaves at 300F for an hour. Reading the reviews after the hour was up because the bread was still wet in the middle, I increased the temperature to 350F for 15 minutes and covered the tops of the bread with aluminum foil to prevent burning. It turned out delicious. Good luck!

Chicken Enchiladas II

Huge favorite with my family. Moved away from home without mom's recipe for "white enchiladas". This was the perfect substitute. I always make extra sauce because it is never enough to cover the whole pan. If I don't, I end up with crispy/burnt tortillas on the edges. Enjoy!

Deviled Eggs

I LOVE this recipe. I actually have used it to make potato salad. Instead of re-filling the egg halves, I chop up them up, add a little extra mayo, and mix it into my cubed potatoes with whatever else I feel like adding. It is so good!
