Refried Beans Without the Refry

Had some neighbors over. Made the recipe just as it is written. My company loved it & even the kids who don't usually eat the beans. Very easy & makes a good amount. We had leftovers after serviing 4 adults & 4 small eaters!

Turkey Pot Pie I

This was amazing. Growing up we ate a lot of the frozen pot pies so I feel scared when it comes to potpies. But my husband has asked many times to have them & I refuse. But I have been looking for a recipe & they are all so high in fat, except for this one. I used store bought pie crusts which work just fine. It did take a little longer than I had planned on due to cutting everything up. I did a few things differantly. I chopped all the veggies instead of how it said. I used one large baking potato instead of 3 total. Potatoes are pricy here so I felt I wanted to save & the one, cut very small, worked great. I completely forgot to add the milk & already had the pie in the oven. It still turned out amazing. I will try to add the milk next time to see if it makes a differance. I added some garlic powder & I only used 1 tbsp of the parsley instead of the 3 tbsp. I also used chicken breasts, cut & cooked instead of turkey b/c I did not have turkey. My whole family loved this & I will make it again & again.

Italian Grilled Cheese Sandwiches

This was amazing & good. We had our neighbors over b/c it served more than our family could eat. We had Bear Creek Chicken Noodle Soup with it on a cold evening. The sandwiches were sooo good & soo easy. It took me about 10 mintues to make dinner & my 7 year old son asked for another sandwich. He usually east 1/2 & he ate a whole & wanted more. Easy & YummY! The Vodka sauce was amazing too, definately makes it even better dipping it in this amazing sauce. Thanks for a great, easy recipe!

Best Toffee Ever - Super Easy

This recipe was amazing & made a huge amount, enough to share with 4 families! The only problem I had was when I poured the mix into the pan, it began to seperate & there was a bunch of melted butter sitting on the top. I don't know why this happened & I knew if I left it there, it would be really bad having hardened butter on top. Underneath the butter was the toffee, beginning to harden. So, I poured the butter off the top & then continued with the instructions & it turned out amazing. I know it wasn't as thick as it should have been, but it was almost like it needed more sugar to mix with the extra butter. I measured everything right, so I don't know what happened, but it turned out good. I did add the vanilla, you can't make a toffee without vanilla! I WILL make this recipe again!

Baby Back Ribs

We used the input for the rub with br sugar, etc. We marinated it overnight with the rub. Cooked 2 hours on 300 & then removed it from the foil & cooked 30 minutes with the bbq sauce, applying a few times. We only used 1/4 bottle of the bbq sauce. It was a little spicy at first but the rub added such amazing flavor to these. I loved them & my daughter ate more than my husband & I. This is a keeper. I am so excited to have such a great recipe! YUM!

Mmm-Mmm Better Brownies

These are the best brownies ever. I always add some chocolate chips to my boxed brownies, so I did the same on this one, just 1/4 bag of semi-sweet choc chips. The rest of the recipe was made exactly like it said. What I loved about these, is the top was a little crisp & the choc chips had settled on the bottom so the bottom was VERY moist. These were so amazing that I can't make them too often, I want to eat the whole pan & so do my kids & their friends! The only other thing I did, was double the recipe as others had said & placed it in a 9X13 pan & cooked for about 35 minutes on same degree! YUMM!

Chicken Milano

This recipe is great, but I changed it a bit. As one "rater" said, why change it so much, just make your own. Well, the idea is great but everyone has their own needs & tastes. For my family, we try to eat healthy so some of this wouldn't work. I went out on a limb, hoping it would turn out & we LOVED it even my 7 & 10 year old. I placed Skim Milk in place of the heavy cream. I chunked up the chicken & cooked it in 1 tbsp of the oil from the sun-dried tomato oil. I added ALL the chicken broth, milk, etc to the pan, & added 1 tbsp flour to thicken it up. After simmering & it began to thicken, I added the chicken to the mixture & continued cooking for a while, added 1/4 cup parmesan cheese & served over whole wheat Penne noodles. Next time we will double the sauce b/c after simmering to the desired thickness, it wasn't enough sauce. Great recipe even making it healthier.

Chicken Fiesta Salad

We did not use the onion or tomatoes so the kids would eat this salad. It was SO good. A lot of differant tastes in all. I make homeade salsa so it was better than it would have been with a jar. If you used jared, I would add some cilantro. I did not use the ranch due to the extra calories & it didn't need any extra moisture. The moisture from the bean mixture is plenty. We put a little bit of shredded cheese & a few crushed tortilla chips. YUM! We will definately make again!

Fluffy Pancakes

This recipe was easy & good. I was a bit scared of the "sour milk" thing & I really dislike vinegar to begin with. But it turned out great. I doubled it so I could freeze the leftovers for the kids for their school week & I added 1 teaspoon of both cinnamon & vanilla, as I always do to any pancakes. And of course, chocolate chips for the kids & yum, it was good. My kids ate twice the amount the usually eat of the boxed stuff!

Tropical Strawberry

This was very yummy! I used Splenda instead of sugar b/c for the morning no added sugar needs to be in my diet. I used a little vanilla, and used vanilla yogurt because it is my favorite. It was pretty thick with the frosen strawberries so I added a little extra milk & no ice. YUMMY!

Downeast Maine Pumpkin Bread

I make Pumpkin Bars this time every year & I have people who wait for me to make it & beg....this bread is even easier & is the BEST pumpkin bread I have ever had. I took what I had read & changed it according to the person with the highest popularity, don't know her name. But I kept reading to add a cinn butter to the top & it took me a long time to find that, so here it is if ya'll are having the same problem I had. Glaze: 1 cup powdered sugar, 5 tsp. milk, 2 Tbsp. melted butter (i used salted), 1/8 tsp. vanilla, 1/8 tsp cinnamon & 1/8 tsp all spice. Add all those ingredients together & right after you ake the bread out of the pan, stick a toothpick all over on the top of the bread & spoon the mix over the top. It will melt down the sides & look beautiful. YUM!!! I am going to make this bread for Christmas gifts this year but put the glaze in small containers with lids so that I can wrap the bread & make it look cute, but still have the glaze that they can add if they would like :)

Stuffed Green Peppers I

This is the first time I have ever made stuffed Green Peppers. My whole family, including my son's 11 year old friend & my 13 year old daughter, loved these!! I did use others ideas. I did 3/4 cup rice & water & I added all seasonings you would put in spaghetti sauce, like Italian, Parsley, Basil, garlic salt, Oregano & of course 3 fresh garlic cloves. I also used only 1 can of the soup, as I do not like too much tomato flavor. I also put the meat mixture in 1/2 way, then the soup, then more meat & more soup & did not top it with more cheese. It didn't need more & I do count calories. This was a really nice, filling dish!!

Mongolian Beef I

I gave 4 stars only b/c of the changes you need to make. I went with others reviews & doubled the sauce & also added 1 tsp sesame oil & 1/2 tsp ginger & 1 freshly pressed garlic clove. I didn't like the meat I used but it is my favorite stir fry I have ever made. It is not a true Mongolian Beef as others have said, yet a great stir-fry. I did cut the pepper flakes in 1/2 & it was still too spicy for our family, so we will lessen it again. But it allows a good taste so I will still add some. We also did the mushrooms & peapods & it was very yummy. Shared with neighbors & they loved it too!

Easy Red Beans and Rice

We did enjoy this recipe but as others said, it was not the normal spanish beans & rice. But it is very good when you don't know how to make the "real" thing. I kept most of the recipe the same, just changed a couple things. We did turkey kielbasa & used 3 garlic cloves, added a dash of cayenne pepper along with garlic salt & fresh cilantro. My friend who makes the "real" thing uses cilantro & I think that is what made this recipe have the yummy taste it did, next time I will use even more. I used diced tomatoes with oregano & garlic in the can. My 10 year old loved it..my 7 year old didn't like it, he ended up having a PB sandwich!

Chocolate Chocolate Chip Nut Muffins

This recipe was pretty good, but not sure if I will make it again. I chose to make this recipe b/c I love Costco Choc chip muffins but won't buy them b/c of the fat/sugar in them. This recipe, for the name of it, was pretty low in all that, being that the recipe made 24 muffins. I did make the changes with the additional milk, salt, cocoa, but I changed the 3Tbsp oil to applesauce. I bake more with applesauce than oil & have never had a problem, so I am not sure if this is why I felt they were not very cake/muffin like. They almost felt rubbery. Not sure why since I bake with applesauce all the time, maybe more than 3tbs would have been better. Mine baked for 18 minutes & was perfect, anymore & they would have been overcooked. I gave it 4 stars b/c they are good & we will eat all of them, but not sure I will make them again.

Cantaloupe Frenzy

I wasn't very impressed with the recipe & neither was my husband. I give it 3 stars because one of my kids liked it. I had a wonderfly ripe cantalope. It was SO strong that I had to add 1 cup frozen vanilla yogurt & 1/2 a banana & I still couldn't drink very much. I wouldn't make it again.

Banana Berry Smoothie II

We were not impressed. Banana overpowers the taste of this. I added some vanilla to make it taste better. I didn't like that it was very milky. I like to have a little frozen, so I added some ice in hopes that would help, but we still didn't feel this was one of the better ones. Oh well!

Egg Drop Soup II

My family didn't like this very much. We had high hopes after all the reviews. We took their suggestions & added double gr onions & startch & eggs. The directions don't say what to cook it on so I had it on medium. The eggs didn't cook like they should have, the soup looked like the original picture on here so the texture was not how it should have been for this type of soup. I was the only one who ate, 1/2 of mine in a family of 4 who are not picky. The texture was too odd & it didn't really taste all that good.

Ginger Glazed Mahi Mahi

I took the other reviews & my family wasn't very impressed. We like fish, but do not love it. We chose to bake it bc I don't fry anything b/c of the fat etc. I baked it b/c another person said they had, but it wasn't very good. We ate it, but I wouldn't make it again.
