Eggplant Parmesan

Amazing!! Absolutely wonderful - so easy to prepare, so much less heavy than the traditional version, full of flavor. I added a slight bit more mozzarella and some sliced onion. Yum.

Home Style Macaroni and Cheese

Great base with a lot of potential for variety. We added mushrooms and spinach in place of the broccoli and cauliflower; a bit of italian sausage; and some parmesan. Yum!

Delish!! I substituted bread crumbs for the crackers and a dash of soy sauce for the steak sauce, because it's what I had on hand. Turned out great!

Pan Seared Salmon I

Yum! Yum! Yum! Made just as directed. Next time I'll hold off on adding the capers until closer to the end of the cooking time. A few got so hot that they went pinging around my kitchen like little bits of floral shrapnel!

Creamy Chicken and Wild Rice Soup

Wonderful, quick, and easy. I great alternative to chicken noodle for that leftover chicken or turkey. I added onions this time and will probably add carrots, mushrooms, and a little garlic next time. I also used 2% milk, instead of the heavy cream.

4H Banana Bread

Very good, easy to follow recipe. I followed the advice of other reviewers and added a 1/2 a cup of extra banana, cinnamon, and nutmeg. I baked it for 50 minutes, then turned the oven off and let it sit for another 10 minutes. I also wrapped it in aluminum foil while warm - a great tip from other reviewers (and my grandma!) for keeping it moist.

Excellent! And, I like others, replaced the cream of tartar with baking powder. They cracked on the top and were chewy on the inside, crunchy on the outside just like they should be!

Baked Potato Soup V

Oh so very, very good. I'm crazy for a super thick potato soup and this fit the bill perfectly. I did all of my potatoes in the oven for an hour (from other reviews, sounds like the time is about equivalent). I made half of a recipe (still SO much soup!), using Brummel & Brown yogurt-based "butter," 2 cups of 2% milk, 1 cup of skim milk, and low fat sour cream. Plenty thick and rich, even with the lighter dairy products. Used fully leaded cheese...I just don't think the low fat stuff melts right! This was incredibly easy to make...thank you!

Wisconsin Cheese Soup I

Yum! I've only found one restaurant in my life that serves what I consider "authentic" wisconsin cheese soup - this recipe came very, very close. I substituted a bit (3/4 cup?) of the chicken broth with beer. That made it almost indistinguishable from the restaurant one that I remember. Thank you so much for the recipe!

Hamburger Salad Sandwiches

Easy Peach Cobbler

Beautiful and easy. I agree with the other reviewers. Cut cream cheese and 1/2 the butter into the cake mix, then spread on top of the fruit. Top with remaining butter and cook for 1 to 1 1/4 hours.
