Pork and Squash Stew

This was a wonderful way to use the butternut squash I had forgotten I had purchased a few weeks ago! I didn't have any celery, so I added some chopped kale, which made a very colorful and attractive soup. I used a little extra broth, and I did thicken it with a little flour at the end. Otherwise, I made it according to the recipe, and it was delicious!

Creamy Rice Pudding

Absolutely wonderful, and so easy. I probably make it once a week now, using 1/2 cup of Splenda instead of sugar, and an extra 1/2 cup of milk. Delicious warm or cold!

Easy Swedish Apple Pie

Delicious!!! I made it exactly like the recipe, except for substituting Splenda for half of the sugar, and adding 1/4 tsp of cardamom to the dough (just because cardamom is such a Swedish sort of spice...), and it turned out wonderfully. My daughter's boyfriend is Swedish, and she says this is very like the apple pie he made when she visited him in Sweden this summer.

Baked Whole Cauliflower

I steamed this for closer to 30 minutes, but it was a pretty big head of cauliflower. Brushed it with melted butter, then patted the seasoned crumb mixture over it, then baked. Really a fabulous looking presentation, and yummy -- even my cauliflower-hating daughter liked it!

Cinnamon Spice Drop Cookies

These are the best new cookies I've found in a long time! I followed the recipe exactly, and they were a huge hit with family and friends. Nice and chewy, which is hard to find in cookie recipes -- maybe it's all the brown sugar! I think these would be almost as delicious with chocolate chips, if I didn't have any cinnamon chips.

Orange-Ginger Sweet Potato Casserole

I took these to Thanksgiving dinner and they were a real hit! I followed the recipe exactly, except for using a whole egg instead of two yolks, and I used 2 tablespoons of ginger. Really delicious.
