Yellow Squash Casserole
My husband says he doesn't like squash and he really liked this (I loved it!). I scaled it in 1/2, sort of, using almost the full amount of cheese and made it in an 8x8 pan. I used 2 large yellow squash and 2 zucchini and steamed them just slightly. I sauteed the onion in the butter (we don't like raw onion) then combined those in a bowl and seasoned with salt, pepper and a little cajun seasoning. I followed the rest of the recipe but skipped the added butter on top and added more seasonings to the crackers. DELISH!

Iowa Pork Steak
I used bone-in pork chops and one can each of golden mushroom and cream of mushroom soups. After an hour in the oven I checked on it and was very nervous, the onion soup smell was overpowering. I was also leery of the long cooking time, but it didn't seem very tender yet so I added a healthy amount of white wine to the sauce stirred it up and hoped for the best. It came out FANTASTIC, very tender and flavorful... I would definately make again! There is a TON of gravy so serve it with some mashed potatoes and enjoy.

Cajun Chicken Pasta
Fantastic! After one bite my husband said "If you don't make this again, I'll have to get with a lawyer". I made the "Cajun Spice Mix" recipe from this site (submitted by Bobbie Jean) for the seasonings and used about 1 1/2 Tablespoons for 3 chicken breasts which I cut into strips. I followed the advice of others and used rotini pasta, red and yellow peppers (instead of green), sauted with about a half of an onion sliced and a clove of fresh garlic instead of the green onions and garlic powder. I also used a squeeze of fresh lemon and 2 Tablespoons of fresh basil. I used 3/4 cup half and half with about 1/4 cup cream to cut some of the fat. I probably could have only used half and half but I was afraid to lose the creaminess. I did thicken it with a little cornstarch and did not add any additional salt. Very minor changes to an excellent recipe!!
