Easy Lasagna II

This recipe is super easy! Midweek I realized that I wanted to have something delicious, but I didn't have the full amount of ingredients on hand so I had to substitute. Even then my this recipe was delicious!! My husband had thirds and he's not a big eater! Here's my how my tweaking came out to a total of 287 calories per serving (12 total) 2 cups cottage cheese (4%) 11 oz of part skim mozzarella 1 egg 32 oz of barilla tomato sauce .40 cup of parmesan 12 lasagna noodles 1 lb of eggplant instead of meat 1/4 c water I followed the instructions on how to prepare. It was delicious! It was super cheesy and very flavorful! I will continue to make this lasagne my way because I'm trying to lose weight while being able to eat! Thank you!

Mom's Zucchini Bread

I made this and as soon as I took it out of the oven I had people coming up to ask me what smelt so good. I used the topping from another recipe, which was a real bonus. Will use this one for the rest of my life.

Crispy Flautas

This is the way my Mom used to make them when we were little. I know it's not the healthiest, but hey, when do you usually eat flautas? I eat them with some guacamole and cream on the side. So delish!

Amazing Chicken

This recipe got me compliments from everyone, including my husband who has a hard time eating chicken. I even fed it to a brother in law who hates mayo and didn't even notice it was there. Of course I added spices to my liking, which I do to every recipe anyways. Will probably doing this weekly :)

Chicken and Sliders

This recipe is simple, but very time consuming. Nevertheless, my family loved it. I added spices of my own to flavor the chicken broth the way I like it. It didn't turn out as thick as I would have liked it to be, but I had some rice in the fridge so I just poured it on that. Will use this recipe again.

Tortillas I

This one is a total keeper! If you decide to use all 5 c. of flour, I suggest you split the dough in half, leaving some oil on top, and covering with a warm/hot towel. That way it will be easier to roll once you get to it.

Lola's Horchata

I really liked the way this recipe came out. I changed a few things though, like blending the rice before and after it was soaked cause usually after it's been soaking for so long it gets a lot softer ad you're able to get the most out of it. I also went ahead and added more milk and sugar. I didn't have any cinnamon sticks but if you add a little more cinnamon than what it calls for it will turn out just fine. All that to say, I'll definitely make this one again.

I liked this recipe, although I didn't have lemon flavored yogurt, but used plain instead and added another teaspoon of lemon juice. I'll definitely make this again.

Strawberry Jam

I really liked this recipe. Its not like I have a lot of experience cooking strawberries cause I'm not so fond of them, but this recipe really made me change my mind. I didn't think it needed that much sugar (cause I was gonna use it next day) so I cut it down to half. Still came out pretty sweet-just perfect.
