About this Cook
I was fortunate enough to be brought up in a house where you had to taste everything at least once, this help to create my love of food. I have always had an interest in cooking, which lead to me doing a advanced diploma in hospitality managment, it had cookery subjects which i really enjoyed. I love cooking for my family and seeing the joy on people faces when then eat what i have created.
My favorite things to cook
Unfortunaley i have a terrible sweet tooth, so i do love to bake desserts, sweets etc. I also love to try and recreate something great ive had when dining out and seeing how close to the real thing i can get.
My favorite family cooking traditions
My mum grew up in Detroit, Michigan USA, so her cooking has definitly influenced what i like and cook at home. Sugar cookies are always been a firm favourite, and she also has a great recipes for a louisianna stew i love it so dark, sweet and sticky.
My cooking triumphs
finishing my course was great i learnt many new cooking skills and techniques. A proud moment was when i made a croquembouche cake (proffiter rolls) very popular as a wedding cake, for my year 12 final piece in food tech. it was great. having a new recipe turn out great is always a triumph or when changing an existing recipe and making it even better.
My cooking tragedies
most recent would be putting way too much baking soda in a date loaf, it tasted terrible...and had to throw it out... shame

Moist Holiday Honeycake
This is a lovely cake. I didn't have any orange juice at home so had to use pineapple instead and still taste great! As I'm in Australia i also substituted the all purpose flour baking powder/soda and salt for Self raising flour. I iced mine with a lemon glaze. Really nice different flavour. Thank you

Chocolate Orange Fudge
this is a great and o so easy recipe i just used u all the extra bits of cooking chocolate, dark chocolate adn christmas choclates i has around the house to add up to the required amount, i didnt have any nuts but some a few chocolate cookies that i crushed up and mixed through, because i had a few different kinds of chocolate i didnt add the orange becasue there was enough other flavours!! soo good and makes heaps could cut up and put in bags and give as presents... last ages in the fridge if they dont get eaten first.

Hummingbird Cake III
this cake is fantastic, for starters i bake it in a round tin rather thatn a jelly-roll pan. I usually use 4 medium to large really ripe bananas for fuller flavour, i also add a whole can of the crushed pineapple (if you in australia the golden circle one)so then the cake is really moist and stays that way for days. its also great becasue its dairy free, i then make it even more over the top by covering it with a banana frosting using dairy free margerine then srinkle shreaded coconut over it.. my mum loves this cake i have to stop her eating it all in one day!
