Over the Fire Scalloped Potatoes

This is a good recipe. I changed mine up... made it a little differently. I used frozen diced potatoes, diced onion & green pepper, cheddar cheese soup, butter, garlic, medium sharp cheddar, sea salt, garlic, paprika, fresh cracked pepper, parsley & foil over an 8x8 baking pan on the grill. Everybody loved it. Thanks! :)

OREO® and Fudge Ice Cream Cake

The dessert assembled quickly. I layed freezer paper in a loaf pan and then assembled the dessert, then turned it over and pulled off the paper and put the topping on it when I was ready to serve it. I added chopped pecans, extra creamy Cool Whip, a few more Oreos and Smuckers hot fudge topping. While I don't think it was comparable to famous chain ice cream cakes, it was good. A big hit with the hubby and our boys. :)

Campfire Baked Potatoes

When we're camping, we always assemble the potatoes with butter, sea salt & cracked pepper wrapped in heavy foil, and packed into a covered dutch oven. It takes a little while but it's easy to open the lid and pierce the potatoes to see how they're progressing. :)

Asparagus Swiss Quiche

Wonderful! I made a few modifications, doubled the eggs and the cream, traded the bacon for prosciutto and a bit of nutmeg. Added a little baking time too, in the range of about 12 minutes in a deep dish pie pan. :)

Ground Beef Curly Noodle

yes, this is a kid-friendly recipe, more distinguished palates, not so much. for the kids, i added garlic & onion powder and used italian diced tomatoes which i gave a whirl in the mini food processor. like others who commented, i added beef broth and also a roux to thicken the sauce up a bit. the kids loved it.

Peaches and Cream Pops

My kids loved these! I made them with strawberries too. To make them a little sweeter I added a little jam to sweeten. My niece was visiting and isn't crazy about trying new things so I "glittered" them by adding some colored sugar crystals before putting them into the popsicle molds and she was quick to dig in when they were frozen. A healthy treat for kids who love treats like Go-gurt!

Triple Bypasses

I made these a little differently than the recipe, because of the reviews that stated the beef was bland. I used my normal hamburger recipe for the grill which is ground chuck, Worcestershire sauce, minced onion, garlic powder, onion powder, sea salt, fresh cracked pepper and a soft stick of butter combined into the mix. I used Nathan's hot dogs, as they're my favorite and compared to the pic, mine turned out quite a bit thicker than the ones pictured. They do take a considerable amount of time to grill. Considering the thickness, I soaked and used wooden skewers cut into thirds, instead of toothpicks. I would recommend bbqing them on low and the lid closed but keeping a close eye on them as the flames flare up quickly! These took me about 30 mins to grill, on low. They were pretty good, the men of the house loved them. Thanks! :)

Basic Flaky Pie Crust

Woohoo! A great pie crust! I made one change, substituting half of the amount of shortening for butter and whirled the ingredients in the food processer. Done in a flash and the crust was absolutely wonderful! :)

World's Best Lasagna

This recipe is sooooo good! I made a few changes to the original, a few of them similar to the suggestions made by others. I added 6 cloves of crushed garlic, changed the sugar and salt to 1 1/2 teaspoons, 1/2 t fennel and a pound of sliced mozzarella. I brought my water for the pasta to a boil, added the noodles then let them come to a boil again, then covered them and turned them off and let the noodles sit for about 25 mins. I omitted the water in the pasta sauce to make it thick and doubled the sauce recipe as we like lasagna to be saucy. MMMM! So good!

Coconut Macaroon Brownies

These are incredibly rich but sooo good! When I make these, I line the 9x13 pan with aluminum foil and grease the foil, so that I can take the sticky brownies out easily and peel down the foil, then cut them up. It's so much easier than cutting them out of the pan because the macaroon layer gets very sticky. Yum! :)
