Cherry Angel Cake Roll

I followed the directions exactly but when I went to unroll the cake, it stuck to the towel. I've made jelly rolls before, but not with angel food cake. Tastes fine as you can't really mess up the flavor of this cake. Probably won't make again as it is too much trouble. It's easier to just torte this, which is what I did with the parts that broke.

Coffeebar Chai

A quick tip for all those spices that is difficult to strain - tie up all spices, including the ground spices, into a coffee filter and a twist-tie from bread bags; add the spice bag to the water to boil for a good 20 minutes. I add orange peel and peppercorns to my spice bag. Tea is supposed to be steeped, not boiled, so after the spices are boiled with the water and honey, I turn off the heat and add the tea bags to steep. After the tea has steeped to my preferred strength, I remove the tea bags. Then I add the milk and bring to a light simmer and then immediately remove from heat. ONLY then, do I add vanilla, as vanilla looses a lot of its flavor when boiled. I've seen this exact recipe on an Indian website several years back. Still good, though, and as close to what you can find in an actual coffee shop.

Corn Chowder

I give this chowder 5 stars as is, without adding or deleting anything. That said, I did make a few additions. I added chicken cubes to the water instead of using salt. When I added the potatoes, I threw in some left over cooked rice, so this thickened up my soup nicely. I also added about 3 handfuls of shredded cheddar cheese at the end with the milk. I made Italian Bread Bowls from this site. Delicious!!!!

Pancakes I

Not sure why everyone says these pancakes are fluffy. Mine were hard and thin. These pancakes also had no flavor. I even added 1 teaspoon bourbon vanilla. I don't understand why some people added more sugar to the recipe when the maple syrup IS sugar. I won't be making these again. Sorry!

Lasagna Bolognese

I couldn't find my own recipe somewhere in my kitchen. This was the closest I came to my own original recipe. I gave this 4 stars because we didn't like the cinnamon. I had to start all over. Things I did differently: mince all veggies instead of chopping. This makes a difference in the sauce and flavor blending. You can use straight Italian sausage, but buy it in bulk instead of messing with casings. The Butcher at the grocery can give it to you that way. I always add a layer of Parmesan cheese in between the Ricotta mixture and the Mozzarella layer. It does make it more cheesier, however, everyone seems to like it better that way. I also doubled the Ricotta mixture as there wasn't enough to layer all the different layers. I like my layers to extend throughout the dish, not just in the middle. As for spices, I added about an extra teaspoon of Pizza seasonings, fresh ground in those little grinders you get at the grocery now. This is about the best basic recipe on this site that I've found. The sauce is the best, if you leave out the cinnamon. You can also take the time to use fresh Roma tomatoes instead of canned for a more authentic flavor. Canned tomatoes always have a metallic flavor to me. Thank you!

Chicken Paprikash

This was good, but it wasn't fabulous. I added the original amount of Hungarian Paprika, but there was no taste to the sauce. I saw on other Paprikash recipes that you could use 3 Tbs, so I did. One of my teens said it was then too spicy and hurt her tummy. My suggestion would be to adjust the spice according to your family's tastes. If you don't want to make the dumplings, just substitute a can of biscuits, cut into thumb sized pieces and cook according to recipe directions. We probably won't be making this again, as we prefer the traditional (Kentucy/Irish) chicken and dumplings that I grew up on.

I followed this recipe EXACTLY as written, and I must agree, these are THE BEST Chocolate Chip Cookies I have ever eaten. My daughter's 8th grade class agrees. So does the soccer team I coach. Definitely teenager-approved. A couple of hints: beat the butter and sugars extremely well, at least five minutes. This is a key step to have the sugar well-incorporated before the rest of the ingredients are added. When adding the flour, add very slowly, beating a little bit at a time. I used semi-sweet chocolate chunks which complimented the size of the cookies nicely. Try to use REAL ingredients like butter and real vanilla. Skip the generic chips and go for higher quality brand. The quality of your vanilla will make a difference in the recipe between that's good to That's GREAT! When taking them out of the oven, the cookies don't look done. Leave them to cool on the same baking sheet as the heat of the pan continues the cooking. This is what keeps the cookie from being overdone and over-crisp.

Chicken and Corn Chowder

My family absolutely loves this chowder! I used fresh corn cut straight from the cob, which gives it a nice, crisp crunch. I served this in Italian Bread Bowls also found on this site, which makes for an impressive presentation. My family thinks I am a gourmet cook now!

Vanilla Fruit Salad

This recipe is not supposed to set up, but I don't think this was made clear. The pudding is supposed to flavor the salad, which it does very nicely. My family loves this!
