Indian Relish

This recipe is great. It's so flexable. It looks like reviewers (myself included) have made substitutions for almost every ingredient and it still gets rave reviews. I had to sub a few things. I used yellow bell peppers and had to use a half cup of white sugar and half a cup brown sugar. I also substituted red wine vinegar because that's what I had. We've had it with cream cheese and crackers, but I'd like to try it on a sausage or brat as another reviewer suggested. It did turn out a bit sweeter than I like, so I'll lower the amount of sugar next time.

Corn and Black Bean Salad

I have a version of this recipe that is exactly the same except it calls for red wine vinegar. It is vinegary and delicious. I save time by thawing a bag of frozen black bean, corn, onion, and pepper mixture. I think the red wine vinegar would allow the flavors of the spices to come through better. I also know someone who makes hers with apple cider vinegar and that too is delicious!

Good restaurant-style salsa. Can be easily adjusted to suit different tastes. Add or reduce the amounts of just about everything, but the tomatoes.

This recipe should have 1/3 c. minced red onion and the footnotes should say to substitute 1/3 c. raspberry chipotle sauce for raspberry salsa.

Pork Tenderloin Diane

I made this recipe as written, but I tripled the sauce as suggested by others because my boyfriend enjoys worcestershire and dijon. The sauce is quite tangy and has a lot of flavor, so if you don't love the tastes of worcestershire and dijon I wouldn't make more. A little goes a long way. Next time I'll probably just buy thin sliced pork cutlets instead of a tenderloin. It saves some time and it won't affect the taste.

Spicy Cajun Shrimp

Too salty, but delicious anyway. Adjust the amount of salt to your personal taste or just omit it all together. The recipe makes way more spice mix than you"ll need even if you were to double the amount of shrimp, but that's okay by me. I love this cajun seasoning so much I've tried it on other fish, meats, and vegetables.

Braised Chicken Breasts in Tasty Mirepoix Ragout

Oh my! So Good. I used "Kitchen Basics" brand chicken stock because it actually has LESS sodium than the 40% reduced sodium chicken broth, plus I think it added a depth of flavor. Other than that made the recipe exactly as written. I served it with no yolk "Reames" brand egg noodles (from the frozen foods aisle). Low-fat comfort food, who knew?!? Added bonus: one pot meal.

Spinach and Feta Pita Bake

We really enjoyed these. They are simple, tasty, and you can dress them however you'd like. We had to bake them longer than suggested, but that may be due to the amount of toppings we added.

Broiled Tilapia Parmesan

One reviewer mentioned that they didn't care for this recipe because the topping overwhelmed the flavor of the fish, but the reason I like this recipe is because I'm not the biggest fan of seafood or fish. I use light mayo to cut out a little fat.

Zucchini Casserole

I made this as a side for Thanksgiving and took it to two dinners. It was very popular with my family and my boyfriend who doesn't care for eggs. It didn't find it eggy at all. I've started making this dish with light mayo and an egg substitute like "Egg Beaters" with great results!
