My favorite family cooking traditions
It would have to be the classic Australian Sunday Roast. Although, as tradition seems to be flying out the window these days, we find that we also have our roast through the week. Luckily, lamb is still affordable in Australia when compared against other countries, so we are very fortunate.
My cooking tragedies
Ha ha. I remember it like it was yesterday. I was in my first year of my apprenticeship and had just been taught the importance of a ‘blue’ steak. My first order came into the kitchen, and low-and-behold it was a blue steak. No problems, I put my skills into action, wrapped the bacon around the scotch fillet, cooked it and served it with the mushroom sauce. About 5 minutes later I was called to the bar to speak to the customer. My blue steak was a little to blue for the customer ...... I had forgotten to cook the other side!

Spicy Barbequed Chops
We enjoyed this immensely. I ended up letting it marinate for about 5 hours in the fridge and cooked them on the griddle plate on the stove. Served them with beans, snow peas, julienne carrots and individual potato au gratin with the new 60% less fat Philadelphia cream cheese!

Cottage Cheese Spinach Chicken
This was an enjoyable dish. I did make a few changes. I flattened the chicken breast and then sprinkled the Cajun seasoning on the piece of meat, after that I pan fried it. Once I took the breast of chicken out of the pan I let it cool before placing the cottage cheese mixture onto it and placed it in the oven for thirty minutes. One final addition was the pine nuts to the cottage cheese mixture. Absolutely divine.

Chocolate Cheesecake I
This was a hit when taken for a luncheon. Admittedly I have never had the gift when it has come to baked cheesecakes, and I am sad to report that this time around was no different. Mine always seem to sag a little. So, to cover my gaffe, I made a toffee cover and placed it on top. Looked great! As we don’t have ‘Graham Cracker Crumbs” in Australia, I actually used the Woolworths brand (Select) of hazelnut and choc-chip biscuits and placed them in the food processor.
