About this Cook
I have been cooking professionally since 1979; however,my career really began with Chef Henry Hiller who was the executive chef at the White House for the Nixon, Ford, Cater and Reagan administrations. After his retirement there, he came to Baca Grande Angel Fire and was the executive chef ther. i had the fortune to be his prep cook and later his assistant. I have also worked as a chef for the Hilton Corp. and I began my own restaurant called Manhattan's in Griffin, Ga. and was very sucessful for many years there. I am now in semi-retirement and I only do catering for smaller functions; I am enjoying it tremendously.

Best Butternut Squash Soup Ever
This recipe is very good, but I combined it with Emeril's recipe'....fantastic! Try saute'ing the veggies until lightly browned; substitue the allspice with nutmeg and just a pinch or two of ginger (hold back a bit on the nutmeg) and as one person also suggested, add some cream. For a kick add Jalepino's if you like warm to hot.

Chantal's New York Cheesecake
If you will follow the direction precisely, it won't fail, but like several other people said DO NOT over-mix or it will crack. The greased sides of the spring-form will also help a great deal. Baking a great cheese cake is an art. I am from new York City and this recipe' is as good as it gets.

Simple Whole Wheat Bread
This is absolutely great bread and as breads go, fairly easy. This would be good for first-time bread makers. I added a bit more honey and I used a little milk with the water.
