Jalapeno Popper Spread

Really yummy! A non-cheese-lover also said he liked it and asked me how to make it for himself. I did skip the parmesan, but it was fine without.

Country French Cheese

This was my first time to make a cheese ball. I was pleased over-all, but it was REALLY hard to get it into a ball shape. Maybe it's just me, but it was sooooo gloopy that I could barely get it together and roll it in the parsley. I do think it needs more flavor--garlic and herbs. Ironically I liked it better the same day I made it, not the next day. The sweetness of the french dressing had permeated the flavor by the next day and I am not into that flavor combo. I may make it again if I know it will be eaten the same day, and with the addition of some ranch (or Italian) dressing mix.

Chocolate Chip Orange Zucchini Bread

I like the orange-chocolate flavor, but definitely prefer regular zucchini bread if I am going to make zucchini bread. Better to save the orange-choco combo for a different cake altogether.

Delicious when left to soak overnight and strained the next day. The quality of vanilla really makes or breaks this beverage--it is wonderful with a good vanilla, but worthless without vanilla or a cheap vanilla. My son calls this "special milk".

This has a wonderful consistency--even after being chilled! It wasn't as chocolately as I like though, so will be adding a bit more cocoa powder and a bit less sugar next time. Thanks!

English Muffins

I would like to rate 3.5, but there is no option. Although, they did turn out ok, it definitely could have used another tsp of salt because they taste, well, tasteless. I have to say (sigh) I really do prefer store-bought. But since I live in Spain, this is the best I can get I suppose. Either way, it's much more convenient to freeze and remove 1 of these English muffins than it is to thaw an individual slice of homemade bread. So I do appreciate that convenience.

I LOVE the blender idea, it makes it so simple!! I'll agree with the others about 1.5 the amount of filling being perfect, and upping the lemon juice/ zest factor. But really, really delicious and so so easy!! Way to go Annemarie!

Meatball Nirvana

Great flavors, though I think I will double all herbs and sauces next time! I think I have finally settled on this recipe for Italian meatballs. The milk made them a bit mushy though, and they fell apart too easily, even after adding an egg. I think if you skip the milk and add an egg or two, the texture will be perfect. Thank you!

Really, really good! Love the croutons and the dressing! I added red bell pepper for some color and it was just great. (I was really afraid of the anchovy fillets, and I only used 3 because of that, but I really couldn't taste anything fishy in the end)

Tres Leches (Milk Cake)

Very good, but much better the 2nd and 3rd day--the eggy flavor disappears, so make ahead. I was hesitant to use all that liquid, but it did work out right. I cut the sugar in the topping to less than half and it was plenty. I think I would increase the cream to 2 cups if I made again, since it was a thinner layer of topping than I remember in Mexico, which I liked better.

The people at the party were happy with them, although I think it depends more on the taste of the sauce than the actual recipe. Good idea, either way, and easy to transport! Works well with regular pizza dough rolled thinly.

Good recipe! I agree: use 1.5 cups white sugar, no brown. And freezing for one hour rather than chilling for 8 hours is so much faster and JUST as effective. Thank you!

Grating frozen fat is such a great idea! Unfortunately I live in a country where I have never seen lard or even shortening. So I had to use more butter in place. It was still good, much better than my normal biscuit recipe. But I just wanted to let people know that it probably still much better with the lard, I just didn't have a choice.

I used the cake part of this recipe only, because a friend gave me some fresh lemon curd that I used as filling. I had never made a jelly roll cake before and was quite intimidated, but it ended up being the easiest dessert I have ever made--so fast!

Beghrir (Moroccan Pancakes)

I was so excited to try this. I ate these in a B&B in Morocco 3 years ago and have been "craving" them since. Although the spongy texture was right with all the little bubbles, the taste was not-so-great. If I make it again, I will add more sugar to the batter and see if that helps at all. All the same, thank you for sharing this exotic wisdom!
