I made this cake for my boss on his birthday because he likes coconut. I picked it because I know some people don't like the texture of coconut and on a traditional coconut cake you put lots of flaked coconut on the outside but this had lots on the inside. I did reduce sugar by 1 cup but made with sweetened coconut flakes. I made in a bundt pan so reduced cooking time by 10 min. and I put the Coconut Cream Cheese icing on top (I reduced sugar in this recipe also because I wanted a thinner, glaze type icing)I brought flaked coconut with me so those that wanted to could put more on top. It was delicious and my boss asked to have another piece. I will definitely make again.

Unbelievable Chicken

I love this marinade. My step-kids aren't crazy about grilled chicken but they love this. I use the leftover chicken for my weekly salads.

Easy Broccoli Quiche

I used this recipe w/ the oil pie crust recipe and made individual quiches in my muffin pan. It turned out really delicious, next time I think I'll ad some bacon to really rev up the flavor.

Overnight French Toast II

I thought this turned out pretty good. I only had sour dough bread tho so that might have cut down on the sweetness. I left in a warm oven so it didn't get hard on me. Was great comfort food.

Unbaked Fruit Cake

This did not set up for me at all, it just didn't have enough moisture. I actually did salvage the ingredients and made it into a cream cheese bar dessert.

No-Bake Cranberry Sauce Pie

I made this for an office party. I did change the crust to a gingersnap crust 'cuz I thought that sounded good. I think my crust was a tad hard and the pie didn't cut well but it was really yummy!

Summer Squash Casserole with Nuts

I tried this last night and it's a keeper! I made a lower fat version using margarine and light mayo. I didn't have green peppers but tore up some baby spinach for color - wonderful. I love the pecans in it.

Fruited Curry Chicken Salad

I think I made this chicken salad 4 or 5 times already. I use light mayo and add more celery, curry, grapes & I used walnuts also. It has been my go-to lunch. Even my step-kids liked it.
