I"m a surgical technologist working at Bayshore Medical Center in Pasadena, TX. I started cooking when I was a teen and have really gotten into it since. I come from a large family, hence the fact I have no idea how to make small portions.
My favorite things to cook
I am more of a cajun cook than anything else, having grown up on the southeastern portion of the Texas Louisiana border and having a mother with Parfait as a maiden name. I fancy myself as a bit of a saucier. There is something so intriguing about the science of sauces. Most of my talents are somewhat wasted, as my wife grew up in the midwest and knows nothing of spicy foods.
My favorite family cooking traditions
Holidays were always the big to do. My grandmothers cornbread dressing is my fondest memories of the holidays which, sadly, was not passed down to me.
My cooking triumphs
Learning the art of stir-fry. I hope to learn Indian cuisine next.
My cooking tragedies
I have had my fair share of "untouchables" that even my pug (known for their eating abilities) turned her nose up at. Live and learn. While on the Atkins diet, I tried to make an "Atkins friendly" key lime pie. It was the most God-awful thing I'd ever tasted.

Ultimate Gulf Coast Gumbo
It's not a bad recipe, but not what I would call "ultimate". Being from SE Texas and LA, this is not the kind of gumbo I grew up on. Tony Chachares would be my seasoning of choice instead of old bay, as it has a spicier kick to it. I would also add oysters as an additional protien, cut the tomato out entirely, substitute 2 tblspns of chicken base for chicken broth, add a 1/4 cup of worcestershire sauce, and set out the filet on the table as a garnish alongside chopped green onions...but that's just me.

Round Steak and Gravy II
Been making a recipe similar to this for years. I like to add sliced bell pepper, onion, and mushrooms when I prepare it. I also throw in a fair amount of black pepper.
