Chicken Pesto Pizza

This is 10 STARS!! I boiled 3 chicken breasts, shredded it with 2 forks and added pizza seasoning to it. I only used 1 tablespoon of pesto, which was plenty. For veggies I cooked a can of mushrooms, diced up a red onion and sliced about 7 cherry tomatoes in a dash of olive oil for 5 minutes. To keep the fat low I used shredded fat-free mozarella cheese too. Piled everything on top of a thin crust Bobabli brand and cooked direct of oven rack at 450 for 8 minutes. I'll be making this a ton!

Italian Stuffed Zucchini

I made this a bit different, but kept the ingredients the same. I sliced and hollowed out my zucchini and cooked them on the bbq grill first. Then added the rest of the ingredients, omitting the cheese to keep the calories down. I liked it, but didn't love it.

Smoky Grilled Pork Chops

KEEPER!! I didn't change anything! I just used my hands to coat my chops with this wet rub. It stayed on and the taste is incredible. Using this all the time for chops!!

Amateur's Light Breeze Chicken Chili

Absolutely DELISH! I did boil 3 chicken breasts then shredded it instead of the canned chicken and only added 1 cup of water. I also added 2TBS flour mixed with 1/4 cup of cold water to thicken it just a bit. I let it simmer only 30 minutes because I was short on time. The flavor is soooo good and it does have 'heat' but we like it that way - even my 10 year old daughter! Will make again and again...yummo!

Chicken Asparagus Roll-Ups

Hubby and I agree - BEST chicken ever!! I forgot to buy the tarragon, used light mayo and added garlic powder and poultry seasoning to the mayo mix. Mine was done in 40 minutes at 475. The asparagus cooked perfectly and the panko crumbs crisped up too. Definitely going into my rotation :)

Oven Fried Chicken II

We all liked this alot. I too added more spices to the flour mixture - seasoning salt, garlic powder, red pepper. I didn't use oil, just sprayed a thick coat of Pam on the bottom of the dish AND each piece of chicken after the coating was on. It crisped up real good.

World's Best Lasagna

10 STARS!! The name says it all...we have never had any other lasagna better then this one. I used turkey italian sausage (took out of casings) and ground sirloin, used wheat lasagna noodles, fat free ricotta and 2% shredded mozarella. Even my 'healthified' version had an abundant amount of flavor!! I also made the sauce the day before and left in fridge overnight. Can't wait to have leftovers for lunch tomorrow!

Delicious! I did use a bit more butter and salt...and cheated a bit and used the cole slaw blend of cabbage since it was already cut up. Even my 10 year old gave it 2 thumbs up!

Crescent Pizza Pockets

Followed recipe as written, but didn't care for the sweet taste of the crescent rolls for a pizza pocket. Plus it needed more sauce IMO. Glad I tried it, but probably won't make again.

Sweet and Spicy Stir Fry with Chicken and Broccoli

LOVED THIS! I followed this recipe exactly with the exception of adding a boag a frozed mixed stir fry veggies and a bag of frozed mixed peppers, and doubling the sauce because of the extra veggies. Just make sure you steam them in the microwave first or your sauce might become watery. Can't wait to make this again!

The Best Parmesan Chicken Bake

This is a definite keeper! WOW! I sprayed my glass 9x13 dish with Pam, trimmed the fat from 6 chicken breats and laid them flat, sprinkled them with garlic powder, red pepper and poultry seasoning. I covered them with one jar of Prego Light spaghetti sauce and a slice of mozarella cheese over each breast. Topped that with crushed up garlic croutons and some parmesan cheese. Cooked it at 350, uncovered for 50 minutes. DELICIOUS!!

Chicken Tortilla Casserole

This would be so much better as a dip rather than a meal (just omit the tortillas). We all ate it, but wasn't our favorite. The consistency was good, not runny and I used corn tortilla strips. Just WAAAAY too long of a process for what you get out of it.

Super easy, super chewy and super delicious! Rolled ours in nuts, coconut and red and green sprinkles. The nut ones were my favorite. Definitley will make again!
