Vegetarian Chickpea Sandwich Filling

Fantastic! I was looking for a way to use a can of chickpeas without just dumping them in a salad. This was so delicious on wheat toast with lettuce that this has been voted in our family to be make regular lunchtime appearances. Thank you.

Baked Ziti I

Really enjoyed this recipe. I especially liked the addition of the sour cream to the recipe. I added a can of sliced mushrooms and used tomato basil pasta sauce with a can of diced tomatoes. So simple and easy and yummy. Thank you!

Herb Roasted Pork

My new go-to recipe! Scaled the recipe for a large crowd on New Years day and everybody loved it. I basted the roast with the juices every 30 min of cook time and watched the roast so it would not be overdone. Also made a gravy with the drippings for a choice of sauces.

Pork Chops Stuffed with Smoked Gouda and Bacon

Wonderful! I did make some modifications based on what I had and not having use of the grill. I had 3 small center cut chops. Cooked my bacon and reserved 2 tbsp of the bacon grease in a saute pan. Butterflied the pork chops and rubbed with a little bacon grease, salt, pepper and garlic powder. Diced the gouda and mixed with a little minced garlic, pepper and Italian seasoning (as I did not have the parsley) and the chopped bacon. I sautéed the cops in the bacon grease 2 min each side and moved them to a baking dish. Then I carefully (may be hot) stuffed the stuffing into the chop and secured but then added the remainder of the stuffing on top of the chops. Baked for 12 min. @ 425degrees and they were perfect! The husband was thrilled! Served with Scalloped potatoes and steamed Brussels sprouts with a little butter and lemon.

Slow Cooker Sausage with Sauce

Very Good! Nothing is better than football and hot sausage. I did simmer the links for 15min to remove some of the fat prior to placing them in the crock pot. Sprinkled shredded mozzarella and served with cucumber salad for a light side. Thanks!

Baked Stuffed Zucchini

Yum! I had extra zucchini and mushrooms so this was a perfect option. I did make some changes though. I sautéed 2 cloves of garlic then added the pulp, mushrooms and green onions. I used the white wine which gave a great flavor. After 12 min. I still had liquid in my pan so I mixed in some Italian breadcrumbs (enough to soak up the liquid but still a moist stuffing). I did not boil the zucchini as I was concerned about them being too soft for my taste so I just popped the zucchini in the oven after they were stuffed on 400 degrees for 25min. I served with garlic and rosemary potatoes.

Awesome Grilled Cheese Sandwiches

Awesome! Always made them on the stove but this makes making multiple sandwiches so simple. The cheese was always cooked through and the the bread was nice and crisp without being soggy. I also only cooked for 5 min. on each side.
