Oatmeal Raisin Cookies I
I haven't ever really learned to bake since my mixer caught fire in my hands the first time I used it hah (traumatic experience, trust me!). But I figured I"d try baking this year for Christmas. Hubby doesn't like chocolate, and I don't like raisins, so I used dried cranberries instead. I read the reviews, and added 1/4 cup flour and 1/2 tsp baking soda because we like soft cookies. I also used 1/2 cup of butter and 1/4 cup butter flavored shortening. Also made it a full 1 tsp of cinnamon. I just pulled the last cookie sheet out and they are AWESOME. With those changes, I will definitely make this again using the dried cranberries instead.

Pennsylvania Coal Region Barbecue
This is a staple at our house. Instead of onions, I use red bell peppers, and instead of white vinegar, I use cider vinegar. I also substitute spicy brown mustard for regular mustard. Even my picky 7 year old stepson will eat it, which says a lot!

Rempel Family Meatloaf
This is the first meatloaf I've ever made, and it was awesome! I'm really picky about leftovers, and this heats up great the next day. I usually use a few extra crackers and a little bit extra cheese, and instead of ketchup and steak sauce I just use BBQ sauce. My husband really likes it, and it's one of the few leftovers that actually disappear.
