Picante Chicken

This was really easy and very good. After the chicken was cooked through, I shredded the breasts and returned them to the skillet for a few minutes to absorb the picante juices. I served the chicken in tortilla shells with lettuce, cheese, and sour cream. The whole family loved it!

Pepper and Olive Pasta Sauce

To start I heated 8 ounces of Italian Olive Salad instead of the olive oil/olives and cooked the garlic and peppers in that. I substituted apple juice for the wine, added a small tin of tomato paste, plus I used 1 teaspoon of cayenne pepper instead of the crushed red pepper and finally I topped it with feta cheese. Very flavorful and it possessed a nice zing.

Soul Smothered Chicken

The only change I made was to serve it over mashed potatoes instead of rice and found it to be wonderful. This is a phenomenal recipe!

Ground Beef a la King

I left out the wine and replaced the tarragon with creole seasoning, then served it over mashed potatoes. It was wonderful!
