I have done "oven-fried" eggplant for years, but I dip the eggplant in an eggwash, then into the bread crumbs. I then spray the eggplant just before baking with olive oil which crisps it up. You can then turn these into mini pizzas by topping with chopped tomato and mozarella and basil. Yummy
