Shiitake Angel Hair Pasta

Very filling and rich! I made this with the "Parmesan Chicken" recipe from this site. The only changes I made were adding a little butter to saute and also melting about 1/2 cup of fresh grated Parmesan cheese to the sauce after it was done. Next time I will omit the chicken broth and double the wine!

Cajun Baked Catfish

I didn't have cayenne pepper, so I used ancho chili pepper instead. It was a little hot, but masked the strong fishy taste I don't like about catfish.

Cornish Game Hens with Garlic and Rosemary

This was great and really easy!! Next time, I am going to use a little less lemon and more rosemary in each hen. The lemon taste was a little too strong. To make the sauce, I worked in the garlic cloves with a hand-held potato masher and thickened it a bit more with corn starch. Additionally, as others' suggested, I added broth to the garlic while roasting so it did not burn.

White Cheese Chicken Lasagna

This was good, but I feel like the prep time was pretty excessive for the final product. Perhaps it is because I cut down on the cheese and other fatty ingredients for health reasons(?). I do want to say that the sauce was really good! It would be great on its own on pasta.

Amazing Whole Wheat Pizza Crust

This works really well in the bread maker. I used the regular "dough" setting instead of the shorter "pizza dough" setting. I pre-cooked the crust for about 5 minutes before adding toppings. I also used entirely whole wheat flour as others did. Next time I think I might add a little more honey.

Ginger Glazed Mahi Mahi

This was delicious and so easy! I grilled mine in aluminum foil for about 8 min and added in sliced green onions. I served it with grilled veggis and brown rice. Thanks!
