So, i am taking a shot at the "no carb diet" thing. So far, it's extremely effective (I've dropped almost 20 pounds in just under 5 weeks).

The most challenging part of it is keeping a good (and healthy) variety of things to eat so you aren't tempted to cheat. You would be amazed at the carbohydrates in almost EVERYTHING tasty - bread, chips, french fries, pasta, fruits and many veggies.

Anyway, in an attempt to make something this weekend that was other than straight meat, cheese, and eggs, i bring you

Jalapeno Scorpion Pigs!!!

Ok, so it should be Jalapeno Shrimp Pigs, but it looks like a scorpion, and that name is just catchier, don't you think?

I love the idea of sticking shrimp in these. I'm not a green olive fan so I'm going to have to think about that part.

Jalapeno poppers on steroids!! Sounds good. You could leave the olives out iceemama.

These sound delicious! I don't want to sound like I'm downing you, but I wanted to let you know that dairy products also have carbs, so the cream cheese in these does add carbs to the dish.

Sorry...I hit "post" too quickly. I also wanted to add that the amount of carbs added by the cream cheese are extremely low. The entire 8 ounces only has 6 grams of carbs, so these are a very good addition to a low-carb diet!
