Skillet Cookies I

I'm always looking for ways to use dates, and everyone loves these, but I thought they were called "Date Balls". You can also roll them in dessicated coconut. (Actually, instead of rolling them, it's easier to put the powdered sugar or coconut into a ziplock bag and put 3 or 4 balls in at a time, then shake them to cover them evenly.)

Usually when I try something different, my kids give it the thumbs down, but we all liked this one.

I make these often, and I've never had any problem with them - well, except that I can't stop eating them...

Irish Potato Candy

Reviewed: Aug. 10, 2005
My son's class were supposed to be farmers, so I put a bunch of these in a little crate, with a sign saying "Potatoes for Sale". They were a big hit.

Ultimate Double Chocolate Cookies

Mmmmmm.... I don't like coffee, but I didn't notice any unpleasant taste of coffee - just a rich chocolatey taste. (And thanks to the reviewers who explained that 1/4 tsp baking soda should be added to regular cocoa to substitute for Dutch process - I didn't know that.)

Portuguese Sweet Bread I

Reviewed: Jul. 23, 2005
This bread was great, and everyone in the family said it was the best bread I've made yet with our new bread machine. I can't give it 5 stars, though, because it did rise up too much. Luckily, I had read the other reviews and was watching out for this, and I sort of punched it down (so the top didn't look so nice). But it was very tasty, and I'll be making it again.

Delicious Chocolate Cornflake Cakes

Reviewed: Jul. 22, 2005
I tasted these while they were still hot and I wasn't too impressed... but after they were refrigerated for a while, I couldn't stop eating them! They're more like candies than cakes, but very easy and delicious.

Saltine Toffee Cookies

I thought these were great - and really easy. I didn't have any trouble getting them out of the pan. My children didn't like them, though...

Cream Filled Cupcakes

I printed this out a long time ago and just got around to making it; they were definitely worth the effort. I piped the cream through the top and then frosted them with chocolate frosting. My kids loved them, too.

Cherry Chip Cake

Reviewed: Mar. 27, 2005
I thought the looks and the texture were fine, but the flavor wasn't what I expected. I couldn't really taste the cherry - maybe it was kind of overwhelmed by the cinnamon?

Fatoosh

Reviewed: Mar. 12, 2005
I live in a Arab country, and this fatoosh is very authentic. There are never any leftovers; even the children love it. (I wouldn't add pickles, but to each her own...)

Jewel Swirls

Reviewed: Feb. 23, 2005
These looked and tasted great. I didn't refrigerate them again after rolling - I just used dental floss to cut them, and they were fine. I use parchment paper on the cookie sheets; the cookies never stick, and there's nothing to clean up. (I don't know how one reviewer got a gooey mess - she didn't actually make the gelatin first, did she?)

Chicken Sandwich Casserole

Reviewed: Feb. 18, 2005
The flavor was OK, but none of us cared for the texture - especially the kids. I was thinking that it might be better with a layer of noodles where the bread was... but then I might as well just make the easy chicken tetrazzini recipe at this site.

Tea Time Tasties

Reviewed: Dec. 28, 2000
I made these for the Eid (celebration at the end of the Muslim fasting month of Ramadan) and they were very popular. I used 2 cups of chopped walnuts, and I still had some lot left over - I think 1-1/2 cups might be enough. I also added some cinnamon to the filling.

Lamingtons

Reviewed: Jul. 1, 2000
These ended up tasting good, and my kids liked them, but I had a hard time making them. This is probably due more to my inexperience than with the recipe, but when I tried to dip the pieces of cake, they kept breaking off in the chocolate... Maybe some extra tips for us novices?

Triple Layer Cookie Bars

They were easy, delicious, and the three layers gave them a nice look. They might be good with chopped nuts sprinkled on top. Also, you can melt the chocolate chips and peanut butter in the microwave.
