This is a perfect recipe! Ya just can't go wrong. Totally refreshing on a hot summer day with a garden full of cukes! My BF has asked me to make this 3 times in the last 2 weeks! LOL :)

Beth's Spicy Oatmeal Raisin Cookies

I made these exactly as written. They didn't end up totally flat, but next time I will flatten them a bit when dropping by tsp. full. Took them to a function and everyone loved them. Thank you!

Banana Banana Bread

Reviewed: Aug. 27, 2010
I made this recipe "last minute." As a result of my ignorance....I started putting the ingredients together and realized I had NO milk OR brown sugar and dropped 1/2 of a banana on the floor (threw away.) So I used white sugar w/1 T. of molasses and for the milk I used 1/4c. Mayo, 1/8 c. sour cream and 1/8c. water...HOPING for the best...well, I waited for my bf to try it first....;) and he LOVED it....even with all the "issues." So this is obviously a VERY forgivable recipe! Will try next time to make it with all the ingredients listed...lol

Tuna Caliente

Reviewed: Sep. 2, 2010
I thought this was a fantastic recipe! Used 12oz. of bow tie pasta and added some 1/2'd cherry tomatoes for color and went about the rest of the recipe exactly. Home made mayo and fresh jalapenos were awesome! Can't wait to take it to work tomorrow!!! :)

French Baguettes

Reviewed: Feb. 13, 2011
I made this tonight to go with shish-ka-bobs. Awesome is all I can say. Everyone in this house said this is beter than the other French bread recipe I have been using....and they were quite skeptical at first....but this just won them over. Made as stated except without a bread machine. I also put a pan of water in the oven as another reviewer stated and "painted" the bread with a beaten egg white. Perfect!!!

Two Ingredient Pumpkin Cake

This recipe couldn't be any easier. I listened to the others advise and added 3 eggs and threw everything in my Kitchen Aid mixer. I took half of it to work and the guys all loved it. Everyone at home thought it was awesome. Very moist.

Slow-Cooker Chicken Tortilla Soup

Reviewed: Oct. 1, 2011
I thought this recipe was great. I made it on the stove top in a large pot. I read the reviews so I was aware of the "too much liquid" issue some of the other cooks were having. Had to agree. I just simply reduced the water. I also added a can of black beans and since I love tomatoes, I added twice the amount (used Rotel). Boyfriend tried to take some to work to share - NOT A CHANCE, I said! Thank you for such a great tasting recipe.

Brooke's Best Bombshell Brownies

Reviewed: Nov. 21, 2011
I thought this was a fantastic easy recipe. I didn't have the issue others had with the brownies being too thin. The only thing I did differently was to also add 1/4 c. Vegetable oil. Turned out very moist. Thank you Brooke!

Slow Cooker Reuben Dip

Reviewed: Oct. 31, 2010
This was great! BF and I just loved it. I decided to sprinkle some fennel seeds on mine and I loved that. BF did NOT. would be a good idea to serve this with them on the side though. I set this out with a home made French bread, rustic bread and pumpernickel. Was AWESOME.

Perfect! The only thing I did differently was soak the beans overnight and did not preboil them. Just baked as directed.

Italian Sausage Lasagna

Reviewed: Jun. 10, 2012
Chef Luigi and I made this dish tonight per his request. The only changes were that we doubled it and added 1/2tsp of fennel because Chef said it would make it more "Italiany." Turned out great, not too heavy. Will be sure to make this again. Thanks Becky!!!

Fried Chicken with Creamy Gravy

Reviewed: Aug. 29, 2010
The chicken came out fantastic! I followed the recipe exactly except I had 1.5 chickens...bet that chicken looked funny in real life! ;) So I had to double the batter mix. I didn't think the gravy was all that great however, that could be due to the chicken stock I used. Perhaps weak and not very "chickeny." Next time I will use good old bouillon or home made stock. Thank you for a fantastic recipe!!!
