Slow Cooker Reuben Dip

Reviewed: Oct. 31, 2010
This was great! BF and I just loved it. I decided to sprinkle some fennel seeds on mine and I loved that. BF did NOT. would be a good idea to serve this with them on the side though. I set this out with a home made French bread, rustic bread and pumpernickel. Was AWESOME.

Bada Bing Bada Banged Potatoes

Reviewed: Oct. 17, 2010
These were absolutely awesome! Made as stated. The whole pan was gone in one meal. Don't plan on leftovers unless it's just 2 people eating....::sigh:: Didn't even get the chance to take a picture. Next time I will make these when no one is home so I can take a pic. - otherwise...they just don't have a chance of hanging around....

We made these last night to go with a hearty beef stew. This is a great simple recipe. They don't rise very much but they taste great.

I made this recipe tonight for my bf's sister and dad and right before I was going to make the topping, my bf's sister exclaimed, "My dad is a diabetic!!!" So I left the topping off. Everyone loved the dish and didn't realize there was no "topping!!| Thank you for a great recipe. Kaynt wait to make it sometime with the topping!

Spinach Appetizers

Reviewed: Sep. 27, 2010
I made these exactly as stated. My bf and I thought they were great - but next time will reduce the stuffing mix by about 1/2 C. These were a bit dry - but with that modificationm - they would be awesome!!! :D

Buttery Corn Bread

Reviewed: Sep. 27, 2010
I rarely give 5 stars...and was quite skeptical about this recipe. First - it seemed like too much flour to cornmeal ratio...but I followed those directions anyway. The only change was to reduce the sugar to 1/2 C.,however, added 1/2 C. apple jelly -wanted the sweetness AND the added moisture. AWESOME! Also sliced some jalapenos on top - PERFECT!

Slow Cooker Macaroni and Cheese II

Reviewed: Sep. 12, 2010
This was an awesome recipe!!! Made exactly as stated but had to use the cheese on hand - which made absolutely no difference...I'm thinking. Used 1 C. of Velveeta (which I really don't care for but used it for it's creamy qualities, 1/2 C. Parmesan, 2 C. Sharp Sheddar and 2 slices of provolone. So sorry to say I couldn't post a picture because...simply said...it just didn't last around this house after serving.....Thank you for an awesome recipe!!!

Oven-Fried Catfish

Reviewed: Sep. 4, 2010
I made this dish and BF and I thought it was great. Had to cook my fish longer because they were more than 1 lb. each and had to make extra coating but it turned out fantastic. Also didn't have corn meal on hand but had Jiffy Corn Muffin Mix - which made it a bit sweet - which I would rather it not be, but it worked. The seasonings were absolutely perfect!!!! Thank you for a great recipe!

Tuna Caliente

I thought this was a fantastic recipe! Used 12oz. of bow tie pasta and added some 1/2'd cherry tomatoes for color and went about the rest of the recipe exactly. Home made mayo and fresh jalapenos were awesome! Can't wait to take it to work tomorrow!!! :)

Zucchini Bread

Reviewed: Aug. 31, 2010
All I can say is WOW! This is absolutely the BEST ever. I couldn't find my bread pans (bread pan thief in the house???) so I used a bundt pan. Cooked for 60 minutes. PERFECTION. I took it to work since I work for a company that is ALL MEN and they (the ones that "tried" this) just kept saying mmmmmmm - and ooooooooo - it was hysterical! The whole thing was gone by noon... The only thing I changed was I used 2.5 C. of zucchini and no choc. chips. Sooo moist! If you didn't tell anyone that zucchini was in it - they would never know!

Fried Chicken with Creamy Gravy

Reviewed: Aug. 29, 2010
The chicken came out fantastic! I followed the recipe exactly except I had 1.5 chickens...bet that chicken looked funny in real life! ;) So I had to double the batter mix. I didn't think the gravy was all that great however, that could be due to the chicken stock I used. Perhaps weak and not very "chickeny." Next time I will use good old bouillon or home made stock. Thank you for a fantastic recipe!!!

Banana Banana Bread

Reviewed: Aug. 27, 2010
I made this recipe "last minute." As a result of my ignorance....I started putting the ingredients together and realized I had NO milk OR brown sugar and dropped 1/2 of a banana on the floor (threw away.) So I used white sugar w/1 T. of molasses and for the milk I used 1/4c. Mayo, 1/8 c. sour cream and 1/8c. water...HOPING for the best...well, I waited for my bf to try it first....;) and he LOVED it....even with all the "issues." So this is obviously a VERY forgivable recipe! Will try next time to make it with all the ingredients listed...lol

Shredded Beef for Tacos

Reviewed: Aug. 21, 2010
This was absolutely awesome! My alterations were nominal. Used my own homemade tomato sauce, 2 toes of garlic, 1 poblano pepper, 1 gr. pepper, 2 japs....we like alot of spice. This was just awesome - made me look like a 5 star chef! Fried up corn tortillas for the vessel and made a salsa/topping of tomatoes, onion, cilantro, 3 different peppers and vinegar and lime juice. This would be a TOTAL hit in ANY Mexican restaurant!!! Thank you so much for the great recipe!!!!

Tomato Cakes

Reviewed: Aug. 3, 2010
I really was trying to find a way to use up tomatoes from the garden and this is what I did. Boiled and peeled 15oz of tomatoes, added 1 1/3 C. Panko crumbs and 1/4 C. Italian Bread Crumbs (hey - it's what I had on hand) 2 T. Fresh Basil, 1 T. Garlic Powder, 1/4 onion, 1/4 green pepper, 1/4 C. Parmesan (the kind in the green can - again...what I had on hand) veggie oil for frying. I tried the recipe exactly, but with most of my different dry ingredients - realized I needed more since the patties kept sticking, something I noticed in other cook's reviews. AWESOME!!! Tried to take photo ops 2 times - 11 yr old daughter and BF kept eating them...until I finally realized that I had to hide them in order to take a pic.....was wondering why there were no pics on here - now I know why.....thought this was weird...tried something new....AMAZING!!!!
