Very Chocolate Brownies

This is a great recipe, very simple, very quick. Very much a cake texture, but hey still yummy. I added 70g of slithered almonds for crunch. I will continue to put in the nuts - I recommend you try it too.

Bacon Ranch Pea Salad

When I first saw this recipe, I thought the bacon was red peppers - which gave me an idea. I follwed the recipe as given, but added red peppers, crushed garlic (which I mixed in the mayonnaise), crushed pepper and a bit of mint. I left out the cheese. For some reason, the cheese part didn't appeal to me. I took the pea salad to a BBQ last night and got the thumbs up all round. The pea mix, as someone called it was picked out and raved about which must have been a good thing as there were other salads there too!

Crustless Cranberry Pie

I thought this recipe was delightful. Every time we have a "bring and share"......... this recipe is requested! I modified it somewhat and added 1 cup coconut. If you feel it may be a bit dry, just add a tad of milk, give it a good mix before putting it in baking dish.

Spicy Cranberry Chutney

As I make my Christmas gifts, I decided that this year they would be Spicy Cranberry Chutney. I tripled the quantities. I did cut down on the crystalized ginger by a tad, and did use orange juice instead of water. However, I did not have red pepper flakes, so used chilli flakes instead 1-1/2 tsp. It just comes through with a faint bite, but still has the sweet, sour tartness it deserves. Almonds kept coming to mind when making this chutney, and as almonds and cranberrys go very well together, and added 140g chunky almonds. I never tasted this recipe before changing it, so don't know how that is, but I can tell you....... this is good! I got 9 bottles, all sterilized out of this, I only hope that it preserves as good as jam.

Chocolate Muffins

Wonderful recipe. I didn't have sour cream, but did have mascapone, which I used instead. Because it was thick, it just needed a bit more beating on a higher speed. I added choc chips, but also added full chunks of chocolate. So I put 1/2 mixture in cups, then added a inch piece of chocolate and then topped up the cups. I then added a chocolate button at the top of the muffin. When the muffins were still warm, the chocolate from the middle oozed out, delicous! When the muffins cooled down, the chocolate went back to its solid state and you bit into solid chocolate through soft, spongey muffin. I highly recommend this. Only thing....... I made a double batch (but they don't last long........ they were devoured within 2 days).

Diana's Hawaiian Bread Rolls

This IS a wonderful recipe. I didn't have Lemon Extract, so left that out, and subsituted butter flavored shortening with 2 Tablespoons olive oil. This recipe definitely needs 1 - 1.5 cups (extra) flour.

Almond-Honey Wheat Bread

I modified this recipe a little. Instead of 1/4 cup honey, I added 1/3 cup and reduced the margarine from 2 tablespoons to 1. I also added 3 tsp coffee which gave it a lovely aroma and a deeper colour - I recomend this! Only proplem with this recipe is that the ingredients stipulated make a medium size loaf. For my hungry lot, I'd like a 1.5kg loaf, so I'll have to play around with amounts. Really, really good recipe 10/10.
