Chicken Unitarian

WOW. Made this for a party of about 60 people or so. The marinade I made just as written, but I used boneless skinless chicken thighs instead of breasts. It was a huge hit with my guests. They cooked for way longer than an hour and half though, and I didn't turn them over at the 1-hour mark. Hey--6 pans and 55 pieces--that was a TON!!! Oh, upping the recipe for that much made way more marinade than I needed, so I froze what was left for future use. GREAT recipe, thanks for sharing!

Black Bean and Corn Quesadillas

WOW! This was my first attemptat quesadillas, and it was fabulous! I added diced cooked chicken that had been marinated in a chipotle marinade. That made it spicy enough that I didn't feel it needed the red pepper flakes. For salsa, I used fresh salsa because that's what I happened to have on hand. Ohhhh, it was so yummy!! And colorful, too. I sense a new family fav coming on :~)

Sausage Egg Casserole

This cass is beautiful to serve!!! The folks I served it to said it was wonderful. I personally haven't gotten to try it yet, but it just looks so darned pretty and the reviews I got were so great I'll def keep making this for church breakfasts, etc.

Chicken Enchiladas I

WOW!!! I've never made enchiladas b4. The family loved it. Tx for prev suggestions. I def cut the water and used the Red Ench Sauce also found on this site. Very, very good.

American Shepherd's Pie

This is a good "starter" recipe! Be sure to flavor the potatoes. I also added a can of tom sauce and more veggies... a bag mix plus green beans.

American Lasagna

Wow! This was a great recipe. I appreciate previous posters' comments: I added more Tom Sauce to make the meat thinner. I didn't have fresh basil so I subbed 1tsp of dried. Here's a neat thing... instead of making traditional lasagne, I made roll-ups! Cook the noodles, pat them dry, then one at a time spread cheese mix, then meat, then top w/mozz and roll on up. These can be frozen individually for a quickie individual meal, or placed in a pan w/more sauce and cheese on top. This is a bit laborious, but I love how easy it is to serve. The individual rolls are mighty convenient, too!

California Chicken

I LOVE this recipe! The previous reviews were helpful too--it defnitely needed the added flavor of the cilantro/lime. My kids love it, too. They even eat the avacado, something they're not "used to"!
