Apple Banana Cupcakes
The first time I made this, I made it with over 10 tablespoons of butter (the equivalent of 2/3 cup shortening); the second time around I scaled the butter back to 6 tablespoons (3/4 stick) unsalted butter and I used the classic quick bread mixing technique where I melted the butter and added it to the wet ingredients and then folded in the dry ingredients. Much easier than creaming the butter with sugar. The muffins were delicious and didn't suffer at all from reducing the fat content.

Chicken, Garlic, and Sundried Tomato Pasta
I like a little more sauce for my pasta so I used two cans of soup and added water as well as milk to the sauce. Oh, and I used condensed cream of chicken and mushroom soup. I did not use any butter, just a little olive oil for sauteeing and also sauteed a carton of sliced mushrooms and added that to the sauce. Also stirred in some fresh chopped basil at the end and omitted the dried parsley. Didn't have Romano so I used freshly grated Parmigiano Reggiano cheese which worked very well. When you have a store-bought roasted chicken on hand, this is a very easy, not to mention, a very tasty dish.

Awesome and Easy Creamy Corn Casserole
I doubled this recipe and I added a little bit of sugar (about 1/4 cup) and used fat-free sour cream. It was superb and looked very impressive, kinda like a souffle.
