Cottage Cheese Chicken Enchiladas

I followed the suggestions in the first couple of comments, but i also added 4 oz of cream cheese to the cheese mixture. They were rich and delicious. Way better than the other recipes I've tried for enchiladas!

Quick and Easy Alfredo Sauce

LOVE IT! This is something I make weekly at our house, it is in our top 5 favorites for sure! We have tried lots of variations depending on what we have on hand. It's really yummy to use fresh garlic and saute it in a little butter before adding everything else, mmmm. We use skim milk and lower fat cream cheese. We've tried margarine...yuck. Fresh parmesian is better than not, but it doesn't make a HUGE difference, there is a difference though. We love adding chicken and broccoli and serving over noodles. The broccoli soaks up the sauce like a sponge, it is mouth watering. Definitely a favorite at our house! PS: Keep the heat down on the cream cheese and butter until it gets nice and "whippy." Sometimes I get in a hurry and turn up the heat to high and it gets a little wild.

Cranberry Apple Muffins

AMAZING!!!! These were SO delicious. I did make a few adjustments to the recipe. 1) I used craisons instead of cranberries. 2) I used 1 C flour and 1 1/3 C whole wheat 3) I used 3 tsp cinnimon. 4)omitted coriander (don't know what that is). 5)Added 1/3 C sour cream. 6) I added 1 tsp Vanilla. I baked it at 350 for 20 min. They came out so moist and flavorful. Seriously, the best muffin I've ever made or eaten. Plus it is SO healthy, especially if you use whole wheat!

Salsa De Tomatillo

I love green salsa. My hispanic neighbors came over a few times to help me get everything right. One thing they mentioned: add one avocado. WOW! It went from a 3.5 to a 5 star after I added the avocado. So delicious!

Double Tomato Bruschetta

They were devoured in less than 10 minutes at my New Years Party. I used 1 tablespoon of freeze dried basil because I couldn't find fresh ANYWHERE that wasn't really expensive. I did toast the bread first with EVOO.

Strawberry Syrup

I blend the strawberries first and then add them. I use about 4 cups of strawberries as well and it's still plenty sweet for pancakes.

Stuffed Peppers

We love this one at our house and I have made it 5 or 6 times. Here is what I do. I use 2 peppers and cut them in half. There is extra filling (probably enough for one more pepper) which I just scoop on the outside of the peppers. (6 Peppers are too expensive for our budget) I poor an extra can of tomato sauce over the top of everything and use lots of italian seasoning. I like to use spanish rice if I have it on hand, white rice works great too. I "blanched" the peppers as someone else suggested this last time and it made a HUGE difference. Apparently blanching means boiling them in water for 2 minutes and then putting them in ice cold water before you stuff the peppers. Enjoy
