Creamy Spinach Soup

YUM! I chose this recipe because it was one of the simper ones I could find online. It did not disappoint, and I will be making it again! I used fresh spinach instead of frozen. I also used "Better Than Bouillon" out of a jar. It taste so much better than the canned bouillon or cubes. Next time I make this, I'll make sure I have a big bread bowl that I can put the soup in. It's a keeper!

Red Pepper-Salmon Pasta

I LOVED this recipe! I asked my husband if he wanted any, and he said he didn't because he didn't feel like eating salmon. So, I made it for myself. Once I was done, my husband says, "Mmmm, that smells good." So, I offer him a bite. He steals my plate and takes another bite. I looked at him and said, "Well, do you want me to make you a plate?" I already knew the answer, so I went off to make him a plate of his own before he ate all mine! I used jarred jalapenos instead of fresh (didn't have any fresh ones on hand), about a 1/3 cup fresh cream, yellow bell peppers instead of red, and fettuccine pasta instead of angel hair (I don't care for angel hair pasta). I accidentally left out the lemon juice but it still turned out great w/out it. I also used sashimi grade salmon (I live in Japan). I think having a good piece of salmon is key, otherwise it makes this dish too fishy. It turned out great, and I'll definitely be making this again!

Marinated Wild Salmon

I enjoyed this recipe. I didn't have white balsamic vinegar, so I substituted it with 1 tbs regular balsamic vinegar and 1 tbs white wine vinegar. I also used sushi grade salmon and cooked it so that it was slightly rare on the inside (I live in Japan, so the salmon is super fresh here). I served it with a side of guacamole, yellow rice, and broccoli florets. I will definitely be making this again!

Cajun Chicken Pasta

oH mY gOoDnEsS this was good! This one goes down as one of the best pastas I've ever made! I will definitely be sharing it w/ friends and family! Next time, I would probably cut back on the cajun seasoning just a tad. I also didn't add any extra pepper....it didn't need it. I added two cloves of chopped garlic and made mine w/ cheese ravioli. It turned out phenomenal! Yumm......too bad there wasn't much left for leftovers tomorrow.

Greek-Style Rib Eye Steaks

I just made this recipe and it was EXCELLENT! Everyone gave it 5 stars, so I thought, it has to be good. Although, sometimes on Allrecipes, 5 stars doesn't always mean good. This one exceeded my expectations and then some! The feta cheese was awesome! At first, I though it might be a little over seasoned. And, when I cooked it, I wondered whether the seasoning would burn and ruin the steak. Well, the seasoning was not overpowering at all, nor did it burn. It was the perfect combination of everything and I will for sure pass this one on to friends and family....and, make it again soon!!!!

Blueberry Sauce

I made this blueberry sauce to go with the "Fluffy Two Step Cheesecake I" from Allrecipes. The two together were perfect! I did change the recipe a bit. I only added 1/2 cup of oj and put in an extra 1/2 cup of water. I also used about 2 tbs of cornstarch because I wanted the sauce to be a little on the runny side. I only put a sprinkle or two of cinnamon and omitted the almond extract because I didn't have any. The sauce turned out great!. At first I could taste the cinnamon (I thought it took away from the blueberry flavor), but two days later you couldn't taste it any more and the over all flavor of the sauce turned out perfect! I froze half of it and will save it for the next time I'm craving yummy cheese cake with a blueberry topping!

Fluffy Two Step Cheesecake I

AWESOME! I loved this cheese cake! I topped it with a blueberry sauce by Isybel (on Allrecipes). Not only was it extremely easy to make, but it looked and tasted great, too! I used 1/2 cup of sugar, 2 blocks of cream cheese, the whole container of cool whip, and 1/2 of a small lemon. I will definitely make this again and pass it on to friends and family!

Barlow's Blackened Catfish

This was very good, but I too thought the seasoning overpowered the fish a bit (and I like spicy food!). Perhaps I put too much on the fish. Next time, I would "lightly" coat both side by sprinkling the mixture on the fish rather than rubbing it on. I also didn't need to cook it as long as it said. I think I had it in the over for only about 25 minutes and that was good enough. It is a keeper.....just be careful not to put too much seasoning on it!

Killer Shrimp Soup

I couldn't tell if I liked it or hated it. I think if you like V8 juice, you will probably like this recipe. I'm not a big fan of V8. I thought it had an ok flavor, but I don' think I would make it again. Perhaps, it's because I ate it on a hot, 92 degrees day!

Rosemary Red Potatoes

Oh my gosh these were good! I used fresh rosemary and extra garlic. YUUUUUUMMY! Putting it under a broiler is a great way to make the potatoes golden brown.

Garam Masala Seared Salmon with Coconut-Curry Butter

I loved this recipe! Instead of using salmon, I used chicken. I only used 1 tablespoon of garam masala on the chicken. It looked like 2 tbs would be too much. I also used salted butter rather than unsalted butter. I ate mine with just regular frozen green peas and on rice. I think next time, a nice yogurt drink would taste great w/ it and would make this recipe PERFECT!
