Quinoa Salad with Mint, Almonds and Cranberries

I had to make a salad for work one night with what I had on hand so I had to tweek this a bit. I used cranraisins instead of cranberries with great results. I also omitted the tomato or celery because I didn't have on hand and frankly it didn't need it. I also didn't have lemon so I made a dressing of white wine vinegar, olive oil and honey. I used dried mint instead of fresh and added twice as much kale. Had everyone ask for the recipe and had to make it again a couple days later just for myself, as it was so good.

Sun Dried Tomato Focaccia

this is fabulous. I agree with the other review that the mozzarella should be added after it bakes for 5 or 6 minutes. I used homemade dried tomatoes in olive oil so it had a little oil in the bread and a little on the top. Don't change a thing.

Linguine with Seafood and Sundried Tomatoes

This is awesome. I didn't use the clam juice, lemon zest, parsley or red pepper and only used half the butter and then added some sautéed onions. There was enough juice in the seafood though it was a bit thin. I used some homemade dried tomatoes that I had just made the day before and they were so flavorful that I didn't need the other flavors except added a little salt and pepper on the plate. I used a frozen seafood medley of calamari, shrimp, scallops and clams from Gordon's. So very good....

Salmon Cakes II

Made this with leftover grilled salmon. Didn't want to waste it so made these cakes the next day. They were kind of bland but with a super seafood sauce they were decent, I wouldn't serve them to the president or anything. I left out the cheese and I didn't have any crumbs so I put in some ground up some old pita chips. Waste not want not. Might have been better if I had used canned salmon.

Bean, Pasta and Roasted Pepper Soup

this was easy. I didn't have red wine vinegar so used some red wine and some white wine vinegar. about 2 Tablespoons of each. I only used 30 ounces of the broth and that was way too much. Needs another can of beans or more pasta to make a meal. It was very good, I will make it again for sure.

southwest "ranch" dressing

great idea, I use yogurt for dressing a lot but this was a good change of pace. I blended it in the food processor before heating. The fresh cilantro is a must. I wasn't tasting a ranch flavor but it is awesome on refried beans. I didn't use any milk but I guess it depends on the moisture in the cottage cheese whether you need it or not.

Spinach Quiche

This was very good. I had to feed 2 big eaters so I added a couple more eggs and little more spinach and a few strips of crumbled bacon. Still it only feed 5. I was hoping for leftovers so will have to make it again.

Absolutely Perfect Palak Paneer

Very very good. I left out the ginger root used yoghurt instead of sour cream and added a bit of fresh squeezed lemon juice. I used frozen spinach and worked just fine. I have never seen ricotta that could be cut in chunks so I had no idea what cheese to use so I used some spanish cheese, had the texture of mozzerela sticks, but hey, it held its shape tasted great, melted in your mouth and the kids loved it.

Oma's Cottage Cheesecake

Not the best, if you are seriously trying to lose weight and must have cheesecake then go ahead and make it. Don't make it for friends or family though, they will think you are a bad cook. I used lite cottage cheese but I don't think that was the problem.

Taco Pasta Salad

I too made changes. I used a mixture of Pace salsa and mayo instead of the Catalina. I added a tablespoon of El Paso taco mix to the salsa mixture and it was very good. Cubed the cheese as another review said. My version though had only a quarter pound of taco meat and slight also on the lettuce. Took it to the family reunion and listened to everyone remarking on how good it was.

White Almond Wedding Cake

25 minutes to bake this at 325 degrees in an 11x13-inch cake pan?, that is wrong, i baked mine for 50 minutes and it was ruined as it still wasn't done but i had to get it out of the oven. the taste was good but it was a mess so i finished tearing it up and threw it in with some raspberries and whip cream.

BBQ Meatballs

I made these for a family reunion. I boiled the meatballs instead of frying them. It makes them less greasy, is easier to do and they hold their shape better. I put them in a crock pot, put the sauce over and cooked on low for 3 hours. Very yummy and I got rave reviews.
