Rice Flour Pancakes

I am allergic to wheat, potato and just about everything else that you can make gluten-free pancakes with. My oldest son is gluten intolerant too. We both LOVE pancakes though and I haven't had them in 3 years. So when I saw this recipe, I had to try it! Making the batter was easy but the wait about killed me. I was so wanting pancakes I couldn't see straight! I had to turn down the stove eye after the first pancake (to med) and I measured them out with a 1/4 measuring cup. They were WONDERFUL! The batter make 5 pancakes. They taste great and don't soak up the syrup like wheat pancakes so you end up with more of a hint of maple, not breaded maple. I will definitely make these again!

Gluten-free, corn-free fruity rice muffins

These are pretty quick to make and very delicious. I love blueberry muffins with jelly.

Gluten-free Cashew Butter Cookies

I just made these and they are GOOD! BUT They DO NOT BROWN! I didn't know that when I customized the recipe. If you put them on in a ball, you end up with an soft cookie after 12 minutes. I cooked one "ball" batch for 15 minutes and it was more to my liking. I love them! I did add the chocolate chips and pecans and tried them without. They are both very good!

Garbanzo Bean Chocolate Cake (Gluten Free!)

I tried this because I have been searching for a cake that I can eat with my 53 food allergies. We started making it, and I have to say, it smelled just awful in the food processor. I wasn't sure I actually wanted to go through with it. But, I really wanted cake. So we continued making it. Once out of the oven, it smelled delicious and rich. We let it cool and instead of powdered sugar, we drizzled Torani Dark Chocolate syrup over it. It was fabulous! Like death by chocolate fabulous. I found my new birthday cake! It's been 4 years since I actually got to eat a cake for my birthday and now I am eagerly awaiting my birthday so I can have cake on my birthday again!
