Country Sausage Gravy

Grandma Ople's Apple Pie

I'd never really fully enjoyed an apple pie before so I'm not sure what gave me the idea to try to make one. I guess I always felt like there was something lacking in the pies I'd had. But for some reason I thought that the idea of an apple pie had so much potential I didn't know why I hadn't had one that was really amazing. So I tried this recipe, and man. oh. man. This is the most delicious apple pie I've ever had by far. It makes me realize that all the times I'd had apple pies before... Those definitely weren't cutting it. I made this for some friends for a dinner party and one friend said he'd never really liked apple pies before either. This one is definitely a keeper and do not change a thing! I did this with the recipe Ruth's Grandma's Pie Crust and it was just phenomenal. It should be a standby for anyone.

Best Big, Fat, Chewy Chocolate Chip Cookie

Perhaps my expectations were a little high given the rating of these cookies, but they definitely did not meet my expectations. They spread out much more than my usual chocolate cookie recipe and ended up a bit thinner than I'd have liked. I mean, these were good, but not the best I've had. My favorite chocolate cookie recipe can be found in the yellow Bell South's Calling All Cooks Cookbook. Now those are some cookies worth writing home about.

Bread Machine Focaccia

This made a pretty good focaccia. I followed the recipe exactly, and was very pleased. I'm not sure if there was much of a WOW factor, but it was good good bread.

Peppy's Pita Bread

My pitas turned out amazingly. Like many others suggested, I subbed half whole wheat flour for half of the all-purpose flour. I also threw in 1 tbsp each of dill weed and garlic salt. This resulted in a nice flavorful pita. I also do not have a bread machine and followed miki's directions for making the dough without one with great success. The only downside in my experience was that the pockets did not form on their own. This may have been my own fault, even though I'm not entirely sure of the physics behind pita pocket formation. I do not have a cake rack and baked my pitas on a lightly greased and floured cookie sheet. The pitas turned out well other than the pockets though the centers were soft and almost-pocketing. I was able to cut into them to form my own pockets pretty easily after the pitas had softened up in a brown paper bag for a while.

Whole Wheat and Honey Pizza Dough

I made this last night, and the crust of my pizza was delicious! I did not find that it turned out dry as many of the other reviewers noted, and I followed several reviewers advice about cooking a few minutes before adding toppings and then another few minutes with toppings, though my cooking times were shortened as I used this recipe to make several individual pizzas. It's just me here, so with all the dough I'm in the midst of a little experiment. I used half the dough to make a few mini pizza crusts, used one for my dinner, and froze the other half of the dough to make more later. I just didn't know if the goodness would last better if I froze cooked bread to add toppings to or to freeze the dough to make the crust each time I want to have a mini pizza. Anyway. Those like me who are only cooking for one have to be a bit experimental with this stuff. But the dough itself was really really good. The honey addition was nice. It didn't give off a honey taste per se, but rather just a nice hint of flavor. I really enjoyed it, and mine came out crisp though next time I may leave in for a minute or two longer to enhance that.
