Awesome recipe, thanks Amy! My teenage son, who doesn't like ginger, loved this dish. Notes: The udon noodles at my local store came in 10 oz, wrapped in 3 bundles, vs 8 oz as in recipe, so I increased the sauce items proportionately. Served it with asian slaw and grilled teriyaki chicken breasts for supper. This recipe has a totally great flavor without changing a thing, but since my family likes spicy hot foods, I will add even more chile next time (oh, YES, I will definitely be making this again!). After trying it as written with udon noodles, I would also like to try it with whole grain pasta noodles to make it a little healthier, but it's so-o-o-o-o good, I'm not even feeling all that guilty right now...please don't ask me tomorrow! ; )
