Pork Tenderloin with Dijon Marsala Sauce

Made as written except for the addition of cremini mushrooms. Sauteed them in the skillet after transferring the pork to the oven, removed them from the skillet, added shallots and continued recipe from there, adding 'shrooms back in the sauce before reducing. Served with mashed potatoes and roasted asparagus...yum-yum!

Baked Garlic Parmesan Chicken

Per other reviews: Used panko, two extra minced garlic cloves in the oil, added dry Italian seasoning, drizzled remaining oil & crumb mixture over top when done. Really good for baked & not fried! Served with store-bought marinara sauce & a side of steamed broccoli.

Firecracker Grilled Alaska Salmon

Per other reviewers, boiled the marinade and served with salmon. Great flavor for not a lot of work...yahoo! Served with Stir Fried Wok Vegetables from this site.

Peanut Butter Noodles

Awesome recipe, thanks Amy! My teenage son, who doesn't like ginger, loved this dish. Notes: The udon noodles at my local store came in 10 oz, wrapped in 3 bundles, vs 8 oz as in recipe, so I increased the sauce items proportionately. Served it with asian slaw and grilled teriyaki chicken breasts for supper. This recipe has a totally great flavor without changing a thing, but since my family likes spicy hot foods, I will add even more chile next time (oh, YES, I will definitely be making this again!). After trying it as written with udon noodles, I would also like to try it with whole grain pasta noodles to make it a little healthier, but it's so-o-o-o-o good, I'm not even feeling all that guilty right now...please don't ask me tomorrow! ; )

Mexican Shrimp Cocktail

Terrific! Followed recipe exactly & it was great...even so, after taste-testing, I decided to add one finely minced jalapeno, an extra avocado, & about 1/3 of an English cucumber (chopped). Refreshing! Served with saltines to enjoy the "juice" as an appetizer to our main entree, Taqueria Style Tacos - Carne Asada, by STANICKS. Thank you, Sarah! I've been looking for a recipe similar to the appetizer served at our local Mexican restaurant!

Fish Tacos

Awesome! The sauce is a hit...I've made it several times the past few months, and sometimes I even dream about it! I've eaten purchased frozen prepared fish (i.e. Gorton's, etc.) just to have something quick to use the sauce on!

French Dip Sandwiches

Wonderful flavor! Served on French rolls & ladled the au just over open face. Next time would like to add onion to crock pot & serve on sandwiches with a cheese to melt such as Provolone. Notes: *omitted bay leaf (didn't have any); *used 1 1/2 c. purchased beef broth vs. bouillon cube; *added water almost to cover after adding beef broth. Wasn't too salty at all with regular soy sauce...perhaps variations in the size of crock pot/roast/& amt of water needed to cover effects saltiness. Plan to follow another reader's advice in using the extra au jus for French Onion Soup. Yum!

Best Bruschetta Ever

Have been making my own similar recipe for years - as other readers suggested, add balsamic vinegar to taste (I love it so usually go overboard) and use fresh basil whenever possible. If you haven't tried fresh basil before, beware, it could change the way you view basil and other fresh herbs. I now grow my own basil so it's always on hand!

Barbecue Ribs

I've made this recipe three times now and love it! However, last weekend I didn't have the chile sauce, and I was out of rum! Since I live far from a store, I substituted hot ketchup and chile powder for the chile sauce, and about 3 Tablespoons of Jack Daniels for the rum. My boyfriend said they were the best I've made. Cajun Seafood Pasta

I was EXTREMELY pleased with this recipe. It was just what I was looking for . . . well worth the effort and calories. I didn't have the scallops so I used all shrimp - it was still great! Would like to try adding some Chorizo sausage also next time.
