Modern Pasta e Fagioli

This was good, a bit on the spicy side. I used spinach in place of the collard greens. I wanted something quick and easy for supper so I didn't want to take the chance of having to cook collards for 40 minutes. I love pasta so to me there could never be too much, but there definitely needed to be more beans. I would make this again with a few adjustments.

Wavy Lasagna with Italian Sausage and Marinara Sauce

This was easy and delicious. Makes enough for a large family or to invite guests over. Reheats well. Also, this can be made ahead. I made it the day before, planning to have it for supper and had something come up, so I ended up refrigerating it and making it the next day. You could also freeze it. Just remember to thaw it overnight before cooking. The baking time will need to be increased if you cook it chilled. Will definitely make again!

Grilled Masala Chicken with Vegetables

The best thing about this was the ease of clean up. The recipe was pretty good. I had to cook it much longer than suggested and my chicken was still not done. I think next time I will cut the chicken into smaller pieces or chop the chicken and vegetables up and top them with the sauce mixture. Perhaps may serve it over rice. The flavors were good; especially with the yogurt and cilantro topping. I think it could have used a little more of something....just not quite sure what. Salt maybe? I will give this a second try.

Amazing Muffin Cups

These were delicious and I didn't have any trouble with them sticking to the pan. I did cook the potatoes a little longer; as recommended by some reviews I read. I did not have red bell pepper so used green. Use your creativity with ingredients your family loves. This recipe has many options/possibilities. These reheated well. I plan on making some ahead for those days when someone needs breakfast-on-the-go.

Sweet and Spicy Salmon with Grapefruit Salsa

I loved that this was super easy to make and called for everyday ingredients that we probably already have one hand or can find easily in the store. I am not much of a fish person, but I really enjoyed this and would make it again. Kudos for helping my family make healthier choices :)

Pork Carnitas with Cilantro Tomatillo Sauce

I was unable to find the tomatillos or the pork shoulder. I used pork loin and a some chunks of tomatillo that I found in a store bought salsa. Everyone liked these but had their own tweaks they would make it we have this again. One of the things we all agreed on is we would use flour tortillas. Definitely a keeper recipe.

Big Soft Ginger Cookies

I tried these for the first time this year after seeing them in allrecipes magazine. I was looking for some new cookie recipes to make with ingredients I had on hand. These cookies may look average, but they taste extraordinary! I didn't have cloves, so I used allspice and used butter not margarine (as suggested in the magazine). I will definitely be making these again!!

Doggie Biscuits I

My dogs absolutely loved these! I also made some for Christmas gifts for my family members who have dogs. I gave 4 stars because as I had read from other reviewers you don't need so much water. I used a half cup. Also, corn is one of the big allergies for dogs so the corn meal isn't the best choice. I replaced it with oats as suggested.

Thanksgiving Leftovers Casserole

I have to give this 5 stars because my family absolutely devoured it and wanted more. I added more shredded cheese on the top 15 minutes before the end of cooking time and served with some cranberry sauce on the side. I agree with other reviewers that say this is a wonderful base recipe and can be tweaked to a family's particular likes. I will definitely make this again. I think it is a great dish to take to Autumn gatherings.

Chiliville Chili

I made this for our small group and it was well liked by everyone. Several people went back for seconds! I will definitely make this again. I had shredded cheese and sour cream to add if desired and I served corn bread and a salad to go along with it. I liked it so much that I ate a bowl of it for breakfast the next morning :)

I agree with another reviewer who said this was a bit bland. It was good, but definitely lacked something. I may make this again and try a few additions. This doesn't make my definitely a keeper list though.

Italian Pocket Sandwiches

I will definitely makes these again; may add some onions and or peppers and a little seasoning, but they were good as is also. My pitas wouldn't open so I ended up cutting them in half and making a sandwich out of the halves.

Grilled Turkey Cuban Sandwiches

We are without an outside grill right now so I roasted the turkey breast in the oven, but still used the seasonings the recipe called for. I used the inside grill/panini maker to flatten and warm them. These sandwiches were a hit with the whole family! I will definitely make this again.

Smoked Sausage Frittata

I made this for supper tonight and served it with croissants and orange juice. It took a little longer to cook than the instructions said, but it tasted wonderful. The whole family liked it and my husband took the last piece for to work for lunch. So I'd say it's definitely a keeper. I think it would be a great recipe to to take to a breakfast or brunch potluck.

Taco Dinner

They tasted okay made as recipe calls for, but I added cilantro since I had it here. My family also mentioned that they think it definitely needed tomatoes and cheese. I would say just make tacos or other Mexican dishes the way your family likes them and add this to step it up a bit. Definitely a lot more corn in ratio to other vegetables. I would buy again, but make the recipe my own way.

HERDEZ® Sweet and Spicy Beef Ribs

I couldn't find the bone-in beef ribs so I made this with boneless. My husband asked me to save the recipe; so this one is a keeper in our house. we plan to try it on other meats. Simple and tasty. Think I will try using less sauce, as the previous reviewer did, as mine did not turn out as thick and I would have liked it to.

Chicken 'N Pasta Primavera

This was very easy and quick! Awesome for a busy day. Much better than take-out. I like that the vegetables are all ready cut up and I don't have to buy a lot of all different things. They don't turn into mush when cooked either. Season to your liking and this makes for a nice family meal. I served this with garlic bread and cantaloupe. My guys are not really into salad, but a salad would be a perfect side dish with this.
