Balsamic Tomato Sauce

I loved this sauce. T1 ate a lot of it and said he liked it a lot. T3 enjoyed it. I don't think that I added additional salt but I can't remember for sure. I simmered this sauce for quite a while (30-45 min) and it reduced down to a thick, dark sauce. Not sure how long (minimum) it would have to be simmered. Definitely a keeper.

Nutty Goat Cheese Patties

I loved these patties. The flavor was subtle but not bland. The nuts added a lot of flavor and texture. Pairing with the balsamic tomato sauce was a winner. T3 loved them and T1 said they were "very good". Both T1 and I liked the addition of the goat cheese.

Cherry Balsamic Dressing

Tuscan Herb oil overwhelmed the cherry flavor of the balsamic. I think it would be better with plain EVOO. Something else was lacking but not sure what. Maybe needed more salt? It was a nice thickness.

Balsamic Dressing or Bowl Sauce

Originally added 1 smidgen of xanthan gum and it was way too thick for dressing but had a nice flavor. I think that the thick version would be great served in a quinoa/tofu bowl or over grilled tofu/veggies.

Asian Ramen Salad

02/07/14 - Liked this much better after adding step to rinse noodles. Rinsing made it much easier to break the noodles without them flying everywhere and also made the end result a little more chewy instead of so crunchy. Can be served right away but is also good when it becomes a big soggy from sitting in the dressing.

Authentic Chicago Pizza

02/02/14 - Made this version for the super bowl and T1 said it was the best we've ever made. The sauce is almost right and the crust was very good. Tasted the same reheated. Set leftovers out to come to room temperature (about an hour). Sprayed a piece of foil with cooking spray and pressed it against the cut sides of the pizza to form a wall. Spooned about 2 Tbsp more sauce on each slice. Placed slices on small cookie sheet and covered the entire cookie sheet tightly with foil (not touching sauce). Baked in a 350 degree oven for 40 minutes, or until hot (at least 140 degrees with laser thermometer).

Pumpkin Fluff Dip

This recipe was super easy and I agree with another reviewer, if you are the least bit interested, go ahead and try it! I did not like this as a dip because it didn't have the consistency of a typical dip. I felt like I was eating a topping or the inside of a doughnut. It did taste good though, so I think it would be a great filling in a puff pastry shell or for a winter pumpkin version of strawberry shortcake or in a doughnut. It might even be good as a light topping on some sort of cider or tea.

Smoked Cheddar Bean Dip

T1 said this was the best bean dip he has ever eaten. He particularly liked the smoked cheese. A little bit of cheese went a long way for flavor.

Indian Lentil Patties or Meatballs

Made without mushrooms, onions or cilantro (none on hand) and still good. Used a little onion from the bottom 3rd of scallions and fine stuffing instead of matzo. Made into meatballs. Served in Indian Butter Chicken sauce over saffron rice.

TLT Vegetarian Sandwich

TG and I both loved this sandwich. Not sure if it would be better marinated or if that would change the texture. We liked it really well as a glaze. TG said he would like it to be taller so perhaps slices of bread instead of a hoagie would be best after all.

BBQ Seitan Ribz

This had a good flavor b/c of the BBQ sauce and it was nicely caramelized b/c of the grill but it was a little dry and a little strange. It was a nice change for a vegetarian meal but not as satisfying as meat. This would probably work best as a small portion with some other things rather than the entire meal revolving around it.

Caramelized Tofu & Brussels Sprouts

This was fairly good, worth experimenting with again. I wasn't certain how much oil/salt to use based on the original recipe. Amounts might need to be modified. I think I would like this better with caramelized onion rings or bigger chunks of onion. It was very sweet but red pepper flakes balance it for the most part. I shredded the brussels sprouts in a food processor (cheese grater) but might try cutting by hand next time to get slightly thicker strips. Worked ok as is but not as pretty. Might add a tiny bit of soy sauce or a few pinches of curry for a more complex flavor. Might also add bok choy or red bell peppers.

Perfect Pancakes

TG said that these were perfect and that he could have eaten 7 or 8 of them easily. I thought they were almost too eggy but TG didn't think so. Update 06/08/14 - Made with half whole wheat flour (hard white) and half the sugar. Reduced to 1 egg for a half recipe. TG said that he didn't notice the whole wheat or reduced sugar b/c covered with maple syrup. Added 10g maple balsamic vinegar for a half recipe. Nice addition.

Sesame-Honey Tempeh & Quinoa Bowl

The tempeh was quite good. The carrot salad was missing something. It was too tangy but still bland. Original recipe called for low-sodium soy sauce but I plan to use regular soy sauce from now on for better flavor. Tried garnishing with leeks and it was not good. Next time might try adding some edemame and possibly cilantro.

Irish Lamb Stew

This was an excellent basic recipe. The fat left on the meat created a very creamy stew. The flavors were very subtle. Probably could have used some garlic. Perhaps could have used more wine, rosemary and mint. Perhaps could have used some dried dill weed, thyme or bay leaves. Could have used sweet potatoes instead of white potatoes for variation. Liked the parsnips. Cooked longer than planned and did not care for the mushiness but TG said that it was not too mushy. Served with cornbread.

Quinoa and Black Beans

This wasn't the best tasting side dish but it was very good considering how healthy it is. Used too much cayenne the first time and no cilantro so would probably be better with that balance.

Green Chile Spinach Quiche

Salsa verde added a nice kick to an otherwise traditional quiche. It was still quite mild and would have been good with additional salsa. Excellent texture.

Vegetable Juice

This seems to be the best recipe for vegetable juice. It isn't delicious but it is better than many of the alternatives and has a nice variety of nutrients.
