Crispy Rosemary Chicken and Fries

This is an amazing and extremely flavorful recipe. The only addition I made was adding the juice of one lemon to the marinade. I marinated the chicken and potatoes in the fridge for 2 hours prior to baking. I basted the chicken/fries every 15-20 mins during cooking. After the first hour of cooking, I removed the chicken as well as the liquids and crisped up the fries. Will definitely make this again!

Garlic Red Potatoes

This was a simple yet very tasty side dish. As other reviewers mentionned the cooking time is longer than posted. I had the potatoes in the oven covered for almost an hour. I also increased the amount of cheese and added italian seasoning to add that herbs flavor. Great recipe!

Chili-Lime Chicken Kabobs

Simple yet delicious recipe! Served this on a bed of Pineapple Salsa (recipe also from this website). Great blend of flavors. I also grilled some limes so that I can add some more juice during serving. Next time I will increase the cayenne pepper for extra kick! Thanks for sharing this recipe!

Pineapple Salsa

This is absolutely terrific! Served it as a side along with Chili Lime Chicken (recipe also from this site). I did scaled down the chili as I was afraid it woul be too hot but it turned out just great. Amazing blend of flavors, will definetly be making this again!

Chicken Chimichangas

This was fabulous and extremely easy to make! As with other reviewers I baked the Chimichangas at 400 degrees instead of frying it. I also opted to do the highly rated guacamole recipe on this site instead of the avocado mix above. Will definitely make again!

Coconut Macaroons III

This is one of my favorite treats! I served it with glazed cherries on top. After baking the macaroons I broiled them for a minute to brown the top, but i left them for a few seconds too long, so they dried up a bit. Other than that very tasty and extremely simple to make. Next time I will try to make them as cookies and use apricot jam to glue 2 cookies together, on their flat side.

Guacamole

A must have recipe in your cookbook! Very nice blend of flavors and texture. I substituted fresh cilantro for dried, since I didn't have fresh cilantro. I also reduced the amount of tomato by half. Served it alongside Lime Chicken Soft Tacos. Will be definetly making this again!

Garden Fresh Tomato Soup

Very heartfull soup and relatively easy to make. Unfortunately the quantity for 2 servings was not sufficient, so I will be making it again soon to have more of it...Other than that delicious, warming and simple!

Nacho Cheese Sauce

Delicious cheese sauce! While cooking, however, the sauce did not thicken until after blending in the cheese and simmering for quite a while. Served it over a bed of restaurant style Tostitos Nachos! A repeatable snack!

Lime Chicken Soft Tacos

Extremely simple and delicious Mexican recipe! I served it with a side of cheese nachos and guacamole. The sauce that is added to the chicken is packed with flavor, and each bite is a new experience. A must try!

Mushroom Rice

Before I made this mushroom rice, I wasn't expecting it to be very flavorful as the ingredients seemed pretty basic. I was so wrong! I made this rice with cremini mushrooms and the rice was packed with rich earthy flavors. I served it along side garlic lime chicken and it was a hit. The only change I made was substitute fresh parsley for the dried version. A great side dish!

Pastry Cream

One word: Yummy! I made this using a 1/4 teaspoon of artificial vanilla flavoring and used it to fill mini-tarts and topped them with fresh fruit. I would have never guessed that making delicious pastry cream can be so simple and relatively quick and easy! Will be looking for other dessert recipes to incorporate this into!

Spicy Garlic Lime Chicken

A very tasty blend of spices and herbs. I opted for grilling the chicken on my indoor grill instead of frying it in the pan. I brushed the meat with the sauce frequently to keeping it from drying up. I served this dish with a side of cremini mushroom rice. Delicious! The only variation I would make next time, would be to add a little more cayenne pepper for an extra kick. Very simple and tasty chicken recipe, that is also healthy.

Tomato, Cucumber and Red Onion Salad with Mint

This has to be the best and simplest dressing I have ever made! A great balance of acid/oil/sweetness. I served it over a salad of cucumbers, red onions, tomatoes, romaine lettuce and mint leaves. Will definetly make this again and again. Thanks for such a great recipe!

Savory Garlic Marinated Steaks

Delicious! The steaks were packed with flavor and with every bite an explosion of flavor occured, from the sweetness of the balsamic vinegar, to the saltiness of the soy sauce! The meat was a bit tough, I am not sure whether it was due to the cut or the marinade. Will try a different cut next time. I grilled 6 steaks for 3 people and had no leftovers! A major hit :)

Pan-Fried Asparagus

World's Best Lasagna

This was my first time making lasagna, and the recipe was very straightforward. I ommited the sausage, and doubled the amount of ground beef. It was a hit! I made it with a side of garlic bread and caesar salad. The only change I would make next time, is less tomato paste, as I felt the tomato flavor was too concentrated. Will definetly make again!

Chicken Pot Pie IX

Delicious yet simple recipe. The only modification I made was to use celery salt instead of celery seeds and salt. It was a big hit. The only word of caution is to keep an eye on the pie crust when baking as time does vary according to oven and the crust itself and it is very easy for it to go from golden to burnt.

Tasty recipe. Like other reviewers I ommited making the peanut sauce and opted instead to make a sub out of the chicken, with fresh cilantro, cucumbers and thai garlic chili hot sauce. Will definetly make again.
