Spicy Tuna Sandwich

Liked the taste of the horseradish mixed into the tuna. I was quite generous with the horseradish, pickle & onion. Added a little chopped celery for crunch. Loved the cheese - I don't usually add cheese to a tuna sandwich. We didn't think it was spicy, just tasty - don't let the name scare you off.

My blender doesn't like to tackle ice so I used about 3/4 cup of milk instead. I also like to use a little less sugar. Super creamy & refreshing!

Pesto Pasta with Chicken

I like to saute some chopped onion along with the chicken, add more pesto sauce than called for & toss in fresh grape tomatoes that have been sliced in half. Also nice with some kind of cheese grated on top - but isn't everything better with cheese :-).

Ukrainian Red Borscht Soup

My spouse loved this soup so I gave it 4 stars. He loved the sausage & tomato in the Borscht. While I enjoyed it too, I prefer a borscht that tastes more like beets. Made the recipe exactly as stated - we both thought it needed more salt. Next time I may use a beef or chicken broth base.

Shepherd's Pie Mexicana

This was a very tasty alternative to traditional shepherd's pie. I made it with frozen mixed veg as that is what was on hand & added a can of black beans as suggested by other reviews. This will be made again & I will be sharing this with others!

Mushroom Swiss Burger

This burger was moist & tasty! My spouse commented twice about how good they were & even suggested making a meatloaf out of it - he usually isn't fond of meatloaf. Didn't have Swiss cheese so used Dubliner cheddar instead, also added a tomato slice & some mustard. This one is a keeper.

Prize Winning Baby Back Ribs

Really simple & easy recipe for some great ribs. I added garlic salt instead of regular salt as we like our garlic in this household. They looked like the ones you see on shows about rib cook-offs! Used the butter knife method for removing the membrane & it does work well. Will be making these again!
