Scallops Mascarpone

This recipe is delicious. I didn't have any mushrooms, so I added onions instead and they were wonderful with the asparagus. I also had to use cream cheese instead of mascarpone. I added about 1/2 cup of shredded parmesean cheese to that mixture too. It was so creamy and delicious, I will definitely try this one again.

Chocolate Brittle Surprise

Wow...I was meaning to make this soon, and a friend beat me to it. Great Sweet & Salty treat. Hers had sliced almonds on it. I can't wait to try this myself with pecans. Delicious.

Grilled Onions

These were wonderful! I made two large onions on the grill for a cookout. I used a little less butter, only about 1 TBSP each. Wow what great flavor! I got rave reviews from everyone and I think we'll make one of these everytime we grill now!

Best Egg Rolls

These were wonderful! I will use this recipe often. I made a couple of changes. I used 2 cans of chicken breast meat, browned in margarine with a little black pepper and onion powder. I used half a bag of coleslaw mix, sauteed with soy sauce and lemon pepper seasoning until wilted. Then I used canola oil to fry them since I didn't have peanut oil. They were so easy and full of flavor!

Bourbon Pecan Chicken

This is so delicious! You should definitely make this recipe. It was one of the best meals we had in awhile. I didn't try the clarified butter, but it seemed ok. I didn't have the green onions to my chagrin, but since it was my first time trying this, I didn't miss them. I will definitely make this again soon!

"Pantry Raid" Chicken Enchilada Casserole

This made a delicious and hearty meal. The only changes that I made were to use 2 cans of chicken, browned with onions and a tsp. minced garlic. My family loved this one. I will definitely make it again.

Easy French Dip Sandwiches

This was so easy and was such a bit hit with my family for dinner. I doubled the recipe for my big family. I couldn't find any consumme so I went with canned beef broth and then added 1/2 tsp each of garlic powder, onion powder and black pepper. It was great and I will make this again soon!

Trout Amandine

This recipe is wonderful! What great flavor. I didn't think it was going to be as good as it was. My husband and his buddy brought home rainbow trout from a fishing trip and I was looking for a quick easy recipe. Even the kids were raving over this one! The almonds put it over the top.

Catfish Pecan

This was so good! I have always fried catfish, and was skeptical that it would get crispy enough in the oven, but it was perfect. I took some other reviewers' advice and added 1 tsp. blackened seasoning, 1/2 tsp. Red Pepper Flakes and two dashes of cayenne pepper. I also sprinkled both sides of the catfish nuggets with some lemon pepper seasoning salt before dipping it in the cornmeal mixture. I doubled the recipe, so I cooked mine for about 25 minutes before everything was crispy enough. I sprinkled the pecans on about 5 minutes before they were done, and wow were they good, definitely my favorite part.

Thai Noodles and Chicken

This was delicious. I only had two large chicken breasts, so I cut them into strips and browned them with some olive oil, salt garlic powder, black pepper and soy sauce. My Cream of Mushroom soup didn't have Roasted Garlic, otherwise I followed the recipe exactly. My family was impressed, and I was too. I will use this recipe again and again.

Crabless Chicken Cakes

These were delicious! Fried them up for a dinner guest, and we all went back for more, then our guest even ate the crumbles left on the serving plate. I would double this recipe next time! We didn't have cracker crumbs so we used panko crumbs instead. This is a keeper.

Chili Seasoning Mix II

This was just perfect for my beef chili and I will use this instead of the packet of chili seasoning from now on! I did not use the flour, as my chili was already thick enough. I did add a TBSP of cocoa powder to add some richness. This chili was some of the best I have made

Baked Buffalo Wings

These were wonderful! I was in a rush, and was unable to refrigerate for an hour. I seasoned the wings with salt and pepper, then put them into the flour mixture. I baked them for about 30 minutes in a 400 degree oven to crisp them a bit. Then I started to baste the sauce on them and bake for another 20 minutes. Finally broiled for another 30 minutes, and turned every 5-10 minutes, basting until the sauce was gone. Long process but worth the great results!
